Classic Hash Browns

I had all but given up on home made hashbrowns and resorted to the overly infested with sodium and preservatives frozen stuff.... Thank you so much for this recipe! I seasoned mine with a little lawry's seasoning salt and they turned out PERFECT!

Super-Delicious Zuppa Toscana

This soup is AMAZING, my husband begs for it all the time! I took others suggestions and used less potatoes and kale instead of spinach. We went to the "chain" a week or so after I made this and dediced this was way better! Thanks for sharing!

Slow Cooker Chicken Taco Soup

This is the best soup known to man kind! I have made a few changes based on other reviewers recommendations, using chicken broth instead of beer and using 2 cans of black beans instead of the chili beans. If I don't have the time to wait for the slow cooker, I will very lightly simmer the chicken for about an hour (i'm sure less time will suffice if you are in a serious time crunch but I've never tested it...), take the chicken out and let it cool. Make sure to not BOIL the chicken unless you want rubbery chicken. Then I will add the remaining ingredients to the home made chicken broth instead of adding boxed chicken broth and let simmer on the stove. When the chicken has cooled enough to shred, I add it back to the soup and cook for another 15-20 minutes. I haven't had a chicken tortilla soup in a restuarant this good, YUM!

Mrs. Sigg's Snickerdoodles

every pregnant womans dream cookie right here!!! I was a little skeptical about the cream of tartar due to other's reviews and the "after taste" but I am here to tell you this is one of the best cookies I have ever had. I am an excellent cook but a TERRIBLE baker. I followed others suggestions of hand mixing all the ingredients and they came out perfect! 8 minutes is the ticket, they are crunchy on the outside and perfectly gooey in the middle. Not sure how old my baking soda was, but I know it wasn't "fresh"... however it didn't seem to make a difference. I did not have shortening so I used an extra 1/2 cup of butter instead, no problems!

Perfect Apple Pie

My husband committed to cooking an apple pie for thanksgiving so of course that meant I had to make it... my first EVER. I did cheat and buy pillsbury pie curst tho, so my raiting is just on the filling. I took others advice and added brown sugar ( I added 3/4 cup white sugar and 1/4 cup brown sugar and my 2nd attempt I used 1 cup cane sugar and 1/4 cup brown sugar). RAVE reviews came from both my mother in law and my aunt whom are very strong food critiques!

Carrie's Artichoke and Sun-Dried Tomato Pasta

I was pretty excited to find this recipe, thinking I had all the ingredients. I had to make a few changes due to my "blonde moment" but it was style quit tasty!!! I went to pull out my sundried tomatoes, which hapened to be roasted red peppers! However it added quit a nice spice! So to get the concentrated tomatoe flavor, I added a handfull of grape tomatoes. I had a jar of kalamata olives open and decided to use those as another reviewer mentioned, but I think next time I would stick to the black olives. I also realized too late my husband had drank the last of the wine, and was out of chicken stock like others mentioned! I was at a loss... but while digging in my cupboard found a few chicken boulion cubes! Normally I don't like to use them, but in this case it worked out great! after bringing the liquids to a boil, I put a lid on the pot so the grape tomatoes would burst and add some more juice to the mix. I think next time I would add a soft cheese like feta towards the end too, but all in all a great escape from the normall and really quick and easy!

Best Brownies

These brownies are awesome! the only reason i gave a 4 star is because I followed some other viewers recommendations instead of the recipe perfectly. I used 1/2 cup brown and 1/2 cup white sugar and also I used 1/2 cup of cocao instead of the 1/3 it calls for (I wanted it extra chocolaty!) Because of time, I did not use the frosting and these were perfect just as is! Next time for an 8x8 pan I will double the recipe and make this nice and thick... but they did come out pretty fudgey and chewey on the inside just like they should be! YUM!
