Crab Quiche

Added double tabasco and 1 tsp Old Bay. Used Colby Jack cheese. Followed cooking instructions and this came out perfectly. Made crustless. MM-good!

Baked Potato Soup

GREAT recipe. Loved the basil. I did add an additional potato to bulk it up a bit. And I cut up my bacon before I cooked it (hate crumbling cooked bacon). Served with some cheddar cheese and a half a spoon full of sour cream. Kids 8 and 11 loved it too. Hubby said it was a real satisfying soup!

Crispy Orange Beef

Great recipe! I make this at least once a month. Kids LOVE it and so do I. I use a pack of stir fry strip beef and slice the strips into 2 to 4 thinner strips. I've never had trouble with it not being crispy. I poured my OJ concentrate into an ice cube tray so I don't waste a can each time I make it! Now I just need to defrost a cube or two. Only thing I add are some red chili flake to heat it up a bit. I usually sub ground ginger and dried orange peel because it's what I have on hand.

Key Lime Pie VII

I made this over the weekend. IMHO you must top or garnish this with whipped topping to mellow it out a bit. Juicing 20 key limes and grating about 8 was time consuming but worth it. To juice the limes without a citrus squeezer cut them in half and insert a fork and twist and press! If making your own graham cracker crust I wouldnt add additional sugar. Just a sleeve of graham crackers in the food processor with 6 TBS melted butter. Oh and let the pie come to room temp before chilling to avoid it seperating from the crust.

Chicken Katsu

Delish and definitely a keeper! I pounded out my chicken breasts a bit and then cut them in two. I dont care for tonkatsu sauce so I mixed up a sauce of soy sauce, honey and a shake of cayenne pepper and spooned it lightly over the chicken. Browned evenly and perfectly crisp. Chicken was juicy. I served it over a bed of sauteed cabbage and onions with steamed carrots on the side.

Awesome Sausage, Apple and Cranberry Stuffing

This has been my turkey day stuffing for several years now. I do sub the bread for bagged stuffing mix sometime using one bag and one loaf of bread. If using the bagged herb stuffing I omit the seasonings. I use pork sausage. Mine fed 7 adults, 5 kids and we had leftovers!

Rosemary Chicken with Orange-Maple Glaze

My family loves this. I make it often just as written. Much much better with real maple syrup- I have tried it with the kids' syrup in a pinch and was dissappointed. Company loves it to- I serve with rice and broccoli.

Sopapilla Cheesecake Dessert

Super easy, a little expensive to make, guaranteed raves. I cut sugar in filling in half and took my dessert to the event and topped it there with honey. ALOT of honey.

Sausage Pizza Bake

I served this for a Sunday football party. Everyone loved it. I did use mini pepperonis, added green pepper for color and doubled pasta and sauce for a 9 x 13. Served 12 adults and 6 kids!

Waikiki Meatballs

This was surprisingly good! I made two batches and froze one for later. I just dumped it into a large saucepan with a lid and heated it up. Turned out great! My 8 yr old helped me roll the meatballs and was very proud of her success.

Creamy Pesto Shrimp

Absolutely delish! I did not use fresh parm (preshredded was fine) and I used 1 cup heavy cream and 1 cup half and half. Also I used an entire 7 oz. container of pesto instead of a 1/3 cup. After melting the butter and adding the cream I was worried it would never thicken- but after I added the pesto it did. Just be patient. I added the shrimp and stirred until they began to pinken- then I removed from the heat and left it to cool a bit. Thickened up beatuifully and the shrimp were PERFECT. Very rich and sinfully fattening but worth every calorie- thanks for the new keeper!

Bandito Beans

I was nervous about these but I trusted the good reviews and the beans were delicious! I forgot to buy a large can of baked beans so I left out the small can of black beans and did a 28oz. can of black beans instead. Then I added a bit of ketchup and mustard and called it a day. This makes a full crock pot full- I fed 30 people and had lots of left overs!

Missy's Candied Walnut Gorgonzola Salad

Yum! I subbed goat cheese crumbles instead of gorgonzola (personal pref). I wasnt sure about the walnuts but I resisted the temptation to add a bit if water. Be patient the sugar will melt. Dont let it get it too brown. As soon as it melts toss to coat and pour them out!

Bacon Wrapped Smokies

These were a hit. The first two trays I baked on the middle shelf in my oven and they burnt slightly on the bottoms. The brown sugar turned into black rock so I had no sauce for those. The next two trays I did on the top shelf and they came out perfectly. To make up for the sauce I lost, I added some more brown sugar to the grease left in the pan and blended it well with a fork- stuck it back in the oven till bubbly and pour it all over the wienies. DELISH!

Baked Kale Chips

I don't have a salad spinner so I did my best drying the kale- laid it out on paper towels squeezed most of the moisture away from washing. /I put the kale in a large bowl and tossed well with olive oil. Spread it out on pan patting it down to get it even- sprinkled with garlic salt. I didn't have any trouble with the baking time- I started checking it after 7 mins per other reviews but it didn't crisp until 15. I was surprised but the kiddos LOVED it- ages 6 and 9! Great salty snack.

Italian Sausage Soup

I added an additional can of beef broth- there would not have been enough liquid without it. Didn't have fresh spinach on hand- I partially thawed a box of frozen cut spinach out on the counter and just dropped it in and the very end- turned off the heat and left the lid on. I thought the soup was good- not blow you away good but good- my kids 6 and 9 liked it okay as well no seconds though.
