Oatmeal Blueberry Muffins

Reviewed: Feb. 7, 2009
It'd give about a 3 1/2. Used all applesauce instead of oil and 1/2 whole wheat flour. Also added 1 tsp of lemon zest which was nice. Moist and tasty, but lacking a little.

Grandma Johnson's Scones

Reviewed: May 19, 2008
Excellent! Not dry at all! Followed reviewers suggestions to add vanilla, cut the sugar and roll into balls in hands to reduce handling. Awesome with raspberries and very good with blueberries. Yummy, yummy and kid friendly too.

Zucchini Chocolate Chip Cupcakes

Reviewed: Oct. 13, 2007
Excellent! Moist and chocolatey! Only used 1/2 cup of chocolate chips and cocoa powder instead of hot chocolate mix (which is mostly sugar). Replaced eggs (because of allergy in family) with 1/2 banana mashed, 1/4 cup sour milk and 1 1/2 tsp powdered egg replacement. Made enough for 24 cupcakes and cooked a little longer (35mins). Also I would use paper liners next time. I greased and found the tops would tend to come off when removing from the pan. Fantastic recipe!

Vegan Corn Muffins

Reviewed: Oct. 9, 2007
Very moist and light. Rose well. I used the buttermilk suggestion with soy milk and lemon juice. I converted the recipe to make 9 muffins and it was more than enough for 12. We are not vegans so I made them for my son's school lunches and added 1/2 cup of ham and 1/2 cup cheese diced.

Apple Breakfast Bread

Reviewed: Oct. 6, 2007
Fantastic! Used the shredded apple and 1/2 cup of raisins. My son is allergic to eggs, so for no eggs, use 1/2 mashed banana, 1/4 cup milk and 1 powdered egg replacement (or more baking soda). Baked for 1hr, 10mins. Awesome! A little sweet - will cut sugar to 3/4 cup next time (also used half white half brown)and a little less cloves.

Best Steak Marinade in Existence

Reviewed: Oct. 6, 2007
This recipe was excellent. I gave it five because I don't usually care for marinades much. I like a steak to taste like steak. Hate traditional steak sauce - it covers up the taste. This marinade enhances the steak flavour and is great for helping with those 'tougher' steaks.

Delicious Black Bean Burritos

Reviewed: Sep. 9, 2007
Excellent, healthy, and easy to make. Watch the cilantro. The first time I added to much. Try blending mixture with hand blender first - makes them pasty like authentic ones. Also I use more low fat cream cheese as I don't find it calls for enough. It helps make them thicker and creamier.

Oatmeal Date Bars

Reviewed: Mar. 9, 2007
Fantastic. Didn't change a thing. Great is you like dry, crumbly topping. If not, these are not for you. Pretty healthy too with not much butter. Definitely a hit with the family. My son keeps asking me to make them again.

Amazing Whole Wheat Pizza Crust

Reviewed: Feb. 25, 2007
Great but really hearty. My husband is the pizza maker and uses 1 cup whole wheat flour and 2 1/2 cups of all purpose. Rolls it out very thin because we like a thinner crust. Also to help with a thinner crust, but still get great flavour (and make it simpler) he only lets it stand once, then rolls it out and puts it in the fridge for 15mins to arrest the yeast. Bake at 500 on pizza pan for 2-3 mins then transfer to pizza stone for 10-12 mins for an awesome, crisp and chewy crust.

Sticky Toffee Pudding Cake

Reviewed: Feb. 25, 2007
My son has an anaphylactic egg allergy - so this is how to make it without eggs. And it turned out fabulous. I only rated it four stars because I found a better sauce recipe as well. Took it for a dinner party and it was a hit. Instead of 2 eggs add 1/4 cup milk (soy is fine) and 1 tsp. powdered egg replacement. If using all-purpose flour, use 1 1/8 cup and add 1 3/4 tsp. baking powder and 1/2 tsp salt. Be aware that the batter looks very runny but it will turn out. Used the 9" greased glass baking dish and cooked for 50-55mins. AWESOME!
