Cake Balls

As a first time cake ball maker I was nervous about mixing the cake with the frosting, but it turned out amazing! My coworkers and family members all thought they were crazy delicious. I used devil's food cake with chocolate frosting and vanilla candy coating, but plan to try other combinations in the near future. Excellent, simple recipe with a great end result!

Scott Ure's Clams And Garlic

Excellent and easy at-home recipe! Mine were a little salty so I will try it with unsalted butter next time, but the flavors were still great and I sopped up as much leftover liquid as I could with some sourdough bread. Thanks for the great recipe!

Chocolate Truffle Cookies

Very good, chocolately cookies. I did half white and half milk chocolate chips because I was worried it would be a little too bitter with the semi sweet chips given the baking chocolate and cocoa powder in the batter. I will definitely make these again, they were a big hit with my husband and his friends that came over!

Banana Banana Bread

This was super moist and delicious! I was worried about it being dry based on some other reviews (although I wasn't sure how it would be dry with the amount of bananas in the recipe) so I added 1/2 tsp of organic pure vanilla extract and 1.5-2 T of sour cream to the wet ingredients before mixing with the dry ingredients. It most certainly did not turn out dry! This is definitely a "keeper recipe."

Best Big, Fat, Chewy Chocolate Chip Cookie

Great cookies! I used 1 bag of Ghiradelli milk chocolate chips and 1/2 bag of Reese's peanut butter chips. They are very sweet though, so the reviews that cut down the sugar might be worth a try.

Gourmet Mushroom Risotto

This turned out great! I added chopped, steamed asparagus at the end for some extra color and crunch. Definitely use the low sodium broth, I found it plenty salty so I think full sodium broth would ruin it.

Hot Artichoke and Spinach Dip II

This recipe was ok, but as with many others, I found it dry and difficult to scoop with tortilla chips. The mayo made it too tangy with a weird after taste and dominated much of the flavor. I took away the mayo, added about 4 oz of goat cheese, a couple dashes of crushed red pepper, 2 more garlic cloves, a dash of Worcestershire sauce and another 1/4 c of Parmesan cheese and the consistency and taste improved quite a bit. I also add about a cup and a half of spinach because I like a thicker, more veggie-filled dip. I'll use this as a base recipe again, but with my own modifications.

Cold Vegetable Pizza

I make cold veggie pizzas ALL the time using the crescent rolls as a crust, but instead of using mayo and dill weed, I use a half a packet (less or more to taste) of ranch dressing/dip mix and blend it with the cream cheese. It gives the flavor a little more kick. I top with chopped broccoli, cauliflower, carrots and shredded cheese after baking/cooling the rolls and spreading the cream cheese, but will definitely try adding mushrooms and cucumbers as this recipe suggests.
