Pepper Jelly
I make this for Christmas gifts each year. I use red bell peppers instead of green to give it a festive reddish hue, and add jalapeno and/or habanero peppers to give it more kick.

Spiced Sweet Roasted Red Pepper Hummus
This has become a staple for me that I make all the time. I triple the recipe, mix in a food processor, and store in multiple small tupperware containers (freezing when necessary to preserve). I add roasted jalapenos to give it a bit more kick, and mix in cilantro instead of parsley. Sometimes I throw in dashes of soy sauce and/or Worchestershire. It's a bit different each time, but I love it each time.
