P.J.'s Fresh Corn Salad

Excellent recipe. I've made it several times and have tweaked it some. I always add fresh chopped cilantro and use double the amount of walla walla sweet onions (or whatever sweet onion is available). For a change in dressing I have also used fresh lime juice with salt and pepper. So refreshing on those warm summer days!

Rice and Raisin Breakfast Pudding

This was delicious! I used almond milk because that is what I had and left out the cardamon (not a favorite). Real maple syrup added a real depth of flavor. Also added a tablespoon of cream on top which was decadent!

Oatmeal Sourdough Rolls

These were probably THE BEST rolls I have ever made. I used all whole wheat including my sourdough and they were fantastic. I left out the molasses and used 1/2 coconut oil and 1/2 real butter instead of the margarine. Raised high and were light and delicious!

Halibut Supreme

This is a wonderful recipe. I had very thick filets so I cut them lengthwise. I also added more red pepper as we like spicy! This will be a regular at our house from now on. Thanks for sharing!

Butternut Squash Soup

I love this recipe, but I never use butternut squash, I use a hearty winter squash. In the Fall I buy several large squash, cook them and freeze them in 3 cup amounts in ziplocks. Then its easy to throw this together. I also use 1/2 regular cream cheese and 1/2 nonfat and double the pepper. It has become my favorite soup. Thanks for sharing!

Acapulco Chicken

Good recipe. I used both red and green pepper and less jalapeno. Also took the advice of others and added zucchini and mushrooms. Very pretty and colorful dish

Oatmeal Peanut Butter Bars

This has a great basis for granola type bars, but has too many "extra" ingredients. I made a batch and felt that it just had too many tastes, but nothing distinctive. Next time I make it I would just use coconut and almonds or chocolate chips and walnuts or rasins and pecans... having too many of these all together was overkill.

Linguini with Broccoli and Red Peppers

Great light and quick dinner- I doubled the butter and parmesean, and added some halved black olives and carrot slices which made it very colorful. Really good! tasting!

Whole Wheat Banana Nut Bread

Yummy! I added an extra banana and used whole wheat pastry flour. Outstanding flavor and texture not at all heavy with the pastry flour. It raised beautifully and was slightly sweet. Next time I make it I might add a bit more sweetening.

Spinach Salad with Warm Bacon-Mustard Dressing

I followed this recipe exactly and my husband's comment was, "It tastes like you just poured mustard on it." The dressing was too thick, way too strong and didn't cover all the salad. I didn't throw it out, but didn't enjoy it either.

Limantro Tofu

Made this exactly as the recipe indicted and was very disappointed. It was spicy, but dry. It really needs a sauce. We tried dipping it in a honey ginger BBQ sauce.
