Quick and Zesty Vegetable Soup

Reviewed: Nov. 26, 2011
Oregano in soup is just fine (reminds me of my g-ma's albondigas). This soup was a good starting point for use w/ground beef but something was missing. I'm not an impromptu cook so I couldn't figure out what could have made it a little better. Nothing wrong with it, just could use some more flavor. Cumin maybe? Red pepper? As I said, I don't have a talent in this area. Thanks for the submission idea.

Cheesy Potatoes II

Reviewed: Feb. 5, 2011
These were pretty ok for a morning banquet. I also halved the sourcream and was happy with the cheese:cream taste ratio. Def. added more potatoes for same amt of cheese. Didn't need the butter though I buttered the bottom of the pan instead. I added powedered garlic & minced onions for flavor & chopped bkfst sausages. I layered the soup mix over the pots then put cheese on top. This was ok but it remained layered & I think I should have mixed the soup w/the pots as the recipe says to. I used mostly thawed pots & still cooked for nearly the whole time. Only spots of the top browned but it remained creamy in the middle more than the outside, maybe because I didn't mix. Dried up a little before serving. I would use these for a morning banquet again. Thanks.

White Brownies

Reviewed: Feb. 5, 2011
These were just ok. Though I like dense bars, I wish these would have risen a little more. Maybe another egg? Even though I'm not one to like baked goods that are super sweet, these could have been a little sweeter, & I even added a couple pinches of brown sugar more than called for. Just the right amount of chips & a nice texture before baking, easy enough to spread. Think I'll try a blondie recipe next time for taste & a "higher" bar though.

Broccoli and Noodles Supreme

Reviewed: Jan. 16, 2011
Surprisingly ok for a quick side-dish for a family w/small kids. A little bit better or at least a change from an out-of-box noodle kit. Didn't have egg-noodles but the elbow noodles I had in stock worked fine. Served w/chicken. Thanks.

McCormick® Gingerbread Men Cookies

Reviewed: Dec. 5, 2010
Not as good as I was hoping. I love molasses & that came through fine but not gingery enough & not very sweet either. I'd add more ginger & br sugar next time. Kindof bland overall.

Spoiled Baby Back Ribs

Reviewed: Nov. 17, 2010
Yumo! I browned to almost cooked the ribs in boiling water first. Then, I basted w/sauce of which I withheld probably a splash of cider vinegar for fear my kids would find it too tart. While the sauce smelled strong from the cider before cooking, it was not strong at all for my taste upon eating. I then put them on the broiler, turning several times about 6 min each side. My husband really liked these & thought they had an oriental flavor though I did not wrap them in foil or anything. I wanted them to be extra sticky so I basted every time I turned.

Corn Spoon Bread

Reviewed: Oct. 20, 2010
I hate giving disappointing reviews but here goes it: this was more like a stuffing than a bread as I had hoped for (maybe I'm not familiar enough w/the dish). As I know my crock to do, the sides burned rendering this gloppy mess inedible even though I tried to cook it in much less time than suggested. The center never seemed to firm up enough to my taste so it was either eat it raw or burn it even more. It's was as if it was meant to stay as creamed corn. My kids didn't like it (no surprise w/something "new") but even my husband (who loves stuffing) wasn't impressed.

Kale Krisps

Reviewed: Oct. 20, 2010
I thought these were great. I salted w/a little bit of garlic salt, chopped up just removing the stems & had a great snack. Great way to use up that extra kale quickly.

Slow Cooker Apple Crisp

Reviewed: Sep. 11, 2010
MMmmmm. If I had it to do over in my tall (but not oval) crock, I would put in the fruit followed by layer of crisp mix, then fruit & top w/crisp mix. The middle layer might not get crisp but the ratio would be better for flavor. I don't find the that mix gets that crispy anyway. I did add 1/2 c oatmeal to crisp mix. I used more peaches than apples (as that's what we had plenty of), & I added vanilla extract to startch mix. Very tastey.

This recipe was good starting point for me since I was looking to use chicken & most importantly okra. I halved the recipe using 6 ckn thighs,

California Style Quesadillas

Reviewed: Jul. 15, 2010
I liked this mostly because it was a tastey way to use excess pappaya that I had. The clarification for order of prep from another reviewer was helpful. A nice, light, tastey lunch.

Lazy Baked Macaroni and Cheese

Reviewed: Jun. 9, 2010
I like this mac. It is true that the noodles are al dente but I'm ok w/that. Was surprised they came out as done as they did w/o having to be covered. True this does not reheat well as it is not very creamy. I should have mixed the cheese in better w/the noodles as the noodles were at the bottom w/a tastey cheese layer on top. Would have liked a better mix. Have made before. Will make again.

Minister's Delight

Reviewed: May 22, 2010
It's true as another said: You really can do any combo. I used Comstock's Lite Cherry filing (since others said was too sweet) w/pineapple cake mix & enjoyed it. Only trouble, last hour I got impatient as the middle didn't seem to be "done" (hard to tell w/only raw, crumbled cake mix & butter) I turned cooker up to high & the sides turned black! Ironically, it didn't taste burnt just looked strange. Need at least 3 hours, maybe more. Also, the buttery cake crumble didn't seem mixed very well. I am challenged in the kitchen & don't know how to fix this except maybe more mixing. Very tastey though. And easy (given the time). Will consider making again.

Strawberry Cake II

Reviewed: May 10, 2010
I LOVE this cake but like the others, the frosting just has the runs. I even altered by adding more powdered sugar but that only helped a little. I love the taste of the frosting but it doesn't tranport well. I hate that I may have to use something thicker like a cream cheese based frosting. While the latter is good, it's just different. Also, I don't feel comfortable leaving the cake out of the fridge for long as I use fresh stawbs. Maybe this isn't a good bake-sale selection. Still, I will be devouring it during strawberry season.

Steph's Summer Salsa

Reviewed: Nov. 23, 2009
I am challenged when it comes to cooking or preparing foods. As such, it isn't clear to me if the corn in this dish is supposed to be cooked or not. And, if it is coming straight off the cob, how does one best keep the kernels in tac.

Fettuccine Alfredo V

Reviewed: May 20, 2009
I really enjoyed this recipe. Careful, it is really rich (fogedabout calories!) but this is just the taste I was looking for. I wish I would have cut the recipe in half as it was way too much. I used canned, grated parmesian/asiago & it was a bit too salty but quite cheesy.

Beef Barley Lentil Soup

Reviewed: May 6, 2009
Mmm-mm good. I used beef stew meat instead. Only used 1/2 c lentils with the barley & this was more than enough for 2 kids, hubby & me. 7 oz of stewed tomatoes gave enough flavor though more would have been ok.

Hearty Hash Brown Dinner

Reviewed: May 6, 2009
While this probably isn't the most healthy meal, even for a crockpot, I was surprised to find this odd combination to be tastey! Leave out the FF onions & it's a kid-pleaser. I used 1/4 tsp salt & Healthy Request cr. mushroom, I also improvised using powdered milk, shredded cheese, onion flakes and 1/2 frozen tater tots with the hash browns, neither of which were thawed but no problems. I added a can of corn & the cheese at the end. My husband loves food like this.

Hermit Bar Cookies

Reviewed: Apr. 27, 2009
I've been looking for a molasses-type "cookie" & this is the first one I've tried. It is a bit stronger in over-all flavor than I anticipated, but maybe more important is that it is not as sweet as I would've liked. I am definitely adding some icing this time, and am wondering how brown sugar would do next time, either that or just add more sugar.

Crispy Walnut Maple Waffles

Reviewed: Jun. 24, 2007
I like this recipes because it doesn't have eggs. I used rice milk instead of cow's. I had to add MUCH more water & milk to create a "pourable" batter. The waffles were a fairly crunchy coming out of the waffle baker. Flavor was a little bland but acceptable for an egg-less recipes.
