Cindy's Pumpkin Pie

Reviewed: Sep. 24, 2008
I read all reviews before making this and here's what I changed. 2 cups of vanilla ice cream, 1 tablespoon of pumpkin pie spice, 2 cups canned pumpkin and used refrigerated ready made pie crusts, decreased sugar to 1/2 cup. I also added 3oz. of cream cheese in the filling because I didn't want it TOO fluffy. I microwaved the ice cream and cream cheese together until the bowl felt warm (about 3 mins). This did make TWO 9" pies perfectly. I baked as in the recipe (15 mins, then 40 mins). I was a little worried, as I'm definitely a pumpkin pie lover, which is why I added more spices and pumpkin. It turned out amazing! Just a little sweeter than regular pumpkin pie (not too sweet!), a tad fluffier & creamier but can still taste the pumpkin and spices!! Crust turned out perfect (covered edges with foil til the last 15 mins). I didn't have separation problems or anything, completely perfect! Thanks Cindy!

Black Bean Vegetable Soup

Reviewed: Sep. 24, 2008
I never had Black Bean soup before but we are vegetarian and trying to find new recipes (sick of the same things every week). I put all the ingredients into my slow cooker at noon (two cans whole beans, 1 can we pureed in food processor with a can of roasted diced tomatoes), added two cups water and two vegetable brother bouillon cubes as reviewers suggested... sauteed onions and garlic in olive oil for about 5 mins before adding to crock. Added some chili flakes, cayenne pepper and some chopped red bell peppers, in addition to the listed ingredients. We were so suprised at how GOOD it turned out with tortilla chips as garnish and grated colby jack on top!! This is replacing chili in our "dinner rotation". Next time will be adding some minute rice near the end to thicken it up a little. Was just as excellent the next day for lunch. Thanks for the recipe!!!

Clone of a Cinnabon

Reviewed: Dec. 18, 2007
Best cinnamon buns I ever had. Bread was light and fluffy, even the crust was great. Made as stated in the original recipe, except we were out of milk and just used water and a sprinkle of vanilla. Hands down, the best recipe I've found yet on this site. BIG thank you to the poster, this is a recipe that will be printed out and hung on the fridge.

Best Bread Machine Bread

Reviewed: Dec. 4, 2007
I made this in my machine and added 2.5 tbls of brown sugar, 2 tsp of cinnamon, 2 tbls of honey and 2/3 c. of raisins to the dispenser (no white sugar) and set my machine to "fruit & nut bread" setting, it turned out PERFECT. The best cinnamon raisin bread I've ever had, it was very moist and fluffy and everyone at work devoured it. I had used another recipe a few days ago for cinnamon raisin and it was horrible compared to this one.

Autumn Cheesecake

Reviewed: Dec. 24, 2006
I followed all of the suggestions, and doubled the ingredients for the filling, as well as doubled the ingredients for the crust, I can't imagine it without doubling the filling, would be way too thin. While preparing the filling, I put the apples in the oven for 15 mins to soften them. I also diced them instead of sliced, so that this would be easier to cut through. I baked for a total of 80 minutes, then left in oven turned off for 30 more minutes. I heat up the bottom of my springform pan on the stove after it cooled so that I could remove the pan bottom and put on a plate. This turned out great, better than any other cheesecake I've made yet! I made two with apples, and then made a version with crushed oreos mixed into the filling, and then spread on top, instead of apples. Thanks for posting this recipe, 5 stars!!

Italian Cookies I

Reviewed: Dec. 18, 2006
I made these with 1tsp of anise and 1tsp of vanilla (instead of just vanilla), with icing made of 10x sugar and milk, sprinkled some of those colored ball things on it, they turned out PERFECT, just like my great aunts that everyone loves.

Peanut Butter Cup Cookies

Reviewed: Dec. 8, 2006
I just made these, instead of peanut butter I used half a cup of melted milk chocolate chips, and 2 tablespoon of cocoa, and instead of peanut butter cups, I used the new Kisses (caramel, peanut butter, cherry cordial, mint). These turned out PERFECT with red and green sprinkles on top. I only wish I had doubled the recipe and made more, but I will definitely be making more on Sunday to take to work with me! I baked them for 9m30s in 375 degree oven, with a sheet of foil on a rack below. Great recipe!!

Banana Oatmeal Cookie

Reviewed: Dec. 8, 2006
I made these twice so far. The first time I omitted the nuts, added a bit more cinnamon, they turned out great, they stay soft forever. The second time I added dried cranberries and everyone at work loved them! I keep a sheet of foil a rack below the cookies so they don't burn on the bottom, as they have a longer cook time (15 mins was perfect). I'll definitely make these again.
