Vegan Chocolate Cake

Had I not made it myself, I would've sworn it wasn't vegan. I used melted coconut oil instead of vegetable oil and doubled the cocoa powder. Best chocolate cake I've ever had, let alone made!

Bagels I

I made whole wheat bagels (2.5 cups of bread flour, 2 cups WW), they were excellent! I think the boil time needs to be a few minutes longer, a few of mine collapsed after i took them out of the water. I'll be trying cinnamon raisin tonight!

Oatmeal Peanut Butter Cookies III

I just made these. I followed the instructions exactly except I only had about 1/2 c oats. I think this made the batter a but wet. I didnt need to grease baking sheet. I didn't flatten, just spooned onto sheet, they came out very thin still. My brother said they are the best cookies he's ever had. I also used all of the icing and it came out to bout 20 cookies total

Ethiopian Cabbage Dish

I needed a way to make cabbage and thought this sounded a little bland/boring but figured I'd try it anyway. It was fabulous! I doubled the spices, added ginger and garlic, and used fresh green beans in place of carrots. It was REALLY good. I used about 1/4 c. oil but next time will use even less. It was even great as leftovers the next day. This is definitely going in the dinner rotation.

This is VERY good, and very cheap to make! I don't bother peeling my potatoes because I'm lazy. I also sometimes use crushed tomatoes in place of chopped tomatoes. If it gets too dry while cooking, I add water. I also use about a tsp of curry paste. Great in whole wheat tortillas or over brown rice! Best in homemade fresh whole wheat pitas.

Spanakopita (Greek Spinach Pie)

This was excellent! Didn't change the recipe at all aside from using 4 packages of frozen spinach, low fat ricotta and adding 1/2 tsp salt. Loved it and will be making it often!

Peppy's Pita Bread

Have made this about 6 times. Perfect every single time. I haven't had one pita not puff up perfectly! Have made with half whole wheat and half bread flour. I do use olive oil instead of vegetable.

Beans, Some Like It Hot!

This was great, healthy and different! I've been getting into indian foods since we went back to vegetarianism recently so this recipe sounded perfect, we eat a lot of beans! I added 1 tsp. of cayenne since my curry paste was 'mild', it still could have used more. Mine ended up being a mustard yellow color, unlike the photo above. I served on top of long grain brown rice. I can't stand coconut, but really enjoyed this dish.

Cinnamon-Sugar Popcorn

A let down. Much easier to just pour butter on popcorn and sprinkle with cinnamon and sugar. Expected this to be more candy like. Back to caramel!

Szechwan Shrimp

This was wonderful!!!!!! Much better than expected. Used sugar in place of honey, added sriracha and sesame oil to sauce and added diced chicken before shrimp. Turned out AMAZING. :)

Pizza Dough II

Great and easy, virtually no effort with my KitchenAid mixer. Used 6 cups of white bread flour and no whole wheat. Made a large pizza one night and had enough dough the next night to make two large calzones!

Slow Cooker Buffalo Chicken Sandwiches

This was pretty good, I used regular ranch dressing and kept everything else the same. The only thing I didn't like was that it made the bread super soggy. I'm making this for a potluck in 2 days and am going to add corn starch after shredding to thicken up the sauce.

Real Homemade Tamales

WOW - I had always thought tamales were hard to make and it hadn't even crossed my mind to attempt it til I saw this recipe and from start to finish, only took an hour and a half (including cooking time), because we didn't cook any meat. I used vegetable shortening, vegetable broth and as the filling, black beans with el pato sauce, cumin, garlic salt & onion powder simmered on the stove for 5 mins, as well as a julienne slice of monterey jack. I also mixed a few tablespoons of the el pato into the dough for flavor, which didn't change the color much. As expected without meat, they were a TAD on the dry side but still great, especially with some el pato sauce on the side. I did need to use about 1/4 c. more broth than the recipe called for. I steamed these in a pot with rack for 1 hour and they were definitely done after that hour, but only did 12 or so at a time. They kept their shape when unrolled, and looked great! This made about 24 tamales for me. OH one more thing, don't even bother using a spoon to spread the dough on the husk, it's MUCH easier just using your fingers to press it down, the dough has lots of fat so it doesn't stick to your hands. Chocolate Cookie Cheesecake

I'll start by saying two people said this was the best cheesecake they ever had. Another said bakery quality! I didn't add cinnamon to the crust, and I baked it a little longer, about 8 or 9 minutes so it wouldn't be soft and I also used double the butter. Instead of bringing the crust up the sides, I used whole cookies (just one cookie side, with the icing removed) and lined them up along the outside of the pan. Everything else I did to a T, the cheesecake part was a bit brown on the top, I was afraid it would be dry but it tasted perfect, quite creamy. The chocolate ganache went down the sides of my cheesecake so once I got it out of the pan the next morning, I stuck more cookie sides to the outside, they held very well to the ganache. Beware - EVERYTHING sticks to the ganache and will pull it up after it cools, at least for me. Next time I will try to spray a small amount of cooking spray on the top so it doesnt stick to whatever I'm using to cover the cheesecake. I let the cheesecake sit out for about 45 mins prior to cutting it and I had no issues at all with it being difficult to cut. I'm making this again today, and another later this week for someones birthday. This is a fool proof recipe, very easy, although it is time consuming! Best recipe yet on this site. Thanks!!! BY THE WAY - a super easy way to get the cake out of the pan without ruining your crust, is to set it on your stove burner on low for a minute or two, it warms up the butter in the crust so it slides

Cindy's Pumpkin Pie

I read all reviews before making this and here's what I changed. 2 cups of vanilla ice cream, 1 tablespoon of pumpkin pie spice, 2 cups canned pumpkin and used refrigerated ready made pie crusts, decreased sugar to 1/2 cup. I also added 3oz. of cream cheese in the filling because I didn't want it TOO fluffy. I microwaved the ice cream and cream cheese together until the bowl felt warm (about 3 mins). This did make TWO 9" pies perfectly. I baked as in the recipe (15 mins, then 40 mins). I was a little worried, as I'm definitely a pumpkin pie lover, which is why I added more spices and pumpkin. It turned out amazing! Just a little sweeter than regular pumpkin pie (not too sweet!), a tad fluffier & creamier but can still taste the pumpkin and spices!! Crust turned out perfect (covered edges with foil til the last 15 mins). I didn't have separation problems or anything, completely perfect! Thanks Cindy!

Black Bean Vegetable Soup

I never had Black Bean soup before but we are vegetarian and trying to find new recipes (sick of the same things every week). I put all the ingredients into my slow cooker at noon (two cans whole beans, 1 can we pureed in food processor with a can of roasted diced tomatoes), added two cups water and two vegetable brother bouillon cubes as reviewers suggested... sauteed onions and garlic in olive oil for about 5 mins before adding to crock. Added some chili flakes, cayenne pepper and some chopped red bell peppers, in addition to the listed ingredients. We were so suprised at how GOOD it turned out with tortilla chips as garnish and grated colby jack on top!! This is replacing chili in our "dinner rotation". Next time will be adding some minute rice near the end to thicken it up a little. Was just as excellent the next day for lunch. Thanks for the recipe!!!
