Deep-Dish Beef Bake

This recipe was good and very forgiving. I dropped the onion mixture and didn't have enough to start over. It still tasted good. I used lowfat mayo and fat free sour cream and it turned out fine. It did take a lot of dishes-which is not my favorite thing!

Mexican Casserole

5+ stars. My kind of recipe- easy tasty and not a lot of dishes. I did the whole thing in one stove-top to oven pot and it worked out fine. I did use the entire jar of salsa (i put the rest over the top before the chips), 2 cups of cheese and almost the complete pack of taco seasoning. WE LOVED IT!

Slow Cooker Pineapple Pork Roast

It was very tasty. I used two cans of pineapple because we are big fans of pineapple. I omitted the craisins because my husband doesn't like them and added about a quarter cup brown sugar. TASTY!

Shepherd's Pie

I enjoyed this. I added worstechire to the beef and soup. I used two cans of mushroom soup instead of the celery. I also added garlic powder (didn't have fresh), onion flakes and cheese and french fried onions on top of the potatoes.

Pork with Peach and Black Bean Salsa

Hot oil is key and browning on all sides of diced pork to get the cornmeal to stick and not go into the sauce. I doubled the salsa, beer, and "reserve liquid" b/c we like things saucy and made rice to put it on top of.
