Matzo Apple Kugel

Two years in a row, I've been the star of both seders and chavurah (friends) gatherings with this simple but utterly delicious recipe!! It is a teen favorite too, and can cross over to dessert as well as entree. Very healthy too. One of the most successful matzo recipes ever!!

Passover Matzo Lasagna

Made this recipe for my chavurah (friends group). I hadn't tried it before, and was wary of how much cottage cheese vs shredded mozzarella. It was fantastic, and everyone loved it!! I need to use 1 1/2 pieced of matzah each level to fit a large casserole dish; this worked perfectly. Also need more marinara sauce, about 1/2 more jar. I will use this recipe forever!!

Drop Dead Delicious Tuna Salad

Delicious!! Very creamy with all the mayo, maybe because I increased the ratio to 12 servings. Having read other posters, I cut down may by 1/5, but still too creamy so I added 1 plus 1/2 more cans of tuna. Still had a pocket of juice on top when I served it to my group, but everyone loved the taste. I'll definitely use this at home, but don't know if I'd bring it to a gathering again.

Actually Delicious Turkey Burgers

This recipe was a total winner with my family. I didn't have an onion on hand, but it didn't suffer as a result. I used stuffing bread crumbs, since I had them on hand, and they added flavor. I'll be making these often, as I can get max pak turkey for less than beef, and it is healthier too. Thanks for the recipe!

Roasted New Red Potatoes

We doubled this recipe and used for a side dish this Thanksgiving, to rave reviews from the 3 families at the table. We added multi-colored peppers (3) and one whole large yellow onion. We got rave reviews, and are still enjoying them the day after as if they were fresh. We will ad a pinch more salt next time, but otherwise perfect as written. Great recipe!

Fast and Friendly Meatballs

This recipe totally works for fast and easy spaghetti and meatballs. I had to double the recipe, and the proportions worked fine. I didn't have any eggs, but the turkey meatballs still held together. I used salt, pepper, and Liebers seasoning salt to spice it up. I didn't have croutons, so I toasted 3 pieces of sourdough bread to dark brown and cubed/shredded them. I used basic Prego sauce which made the cooking time even quicker. My teens and husband all went for seconds, then thirds!

Beef Stew VI

Delicious and hearty!! I substituted red potatoes, which added a nice look and elegance. I will add more vegetables next time, as the meat was dominant and a heavy meal. The spicing was great, no changes there. We also shortened the cooking time, as the meat was very tender and vegetables cooked 15 minutes earlier than estimated. All in all, a wonderful main dish!!

Spicy Vegetable Beef Soup

This was a great winter soup for my kids and husband. I used what was on hand; 2 1/2 pds pot roast, doubling the beef broth and stewed tomatoes (used italian spiced, which added to the flavor). I added two fresh zuchinis, 1 pound fresh carrots, and fresh mushrooms and celery with frozen corn. I only had organo and and basil, also added a few dashes of paprika. Everone loved it, including me!!!
