Ginger Glazed Mahi Mahi

I made this for our family dinner with the mahi my husband caught. It was a hit! Even my young nieces (ages 4 & 7) couldn't get enough of it! (Although, the sauce was a little too salty for my taste.)

Baked Teriyaki Chicken

This recipe is a definite keeper and will be included in my menu rotation! I basically followed the tips from "Valerie's Kitchen". I'm not sure if anyone else mentioned it, but this sauce reminds us of Filipino-Adobo chicken! I'm sharing this recipe with my brother, who is always looking for recipes that are flavorful and easy to prepare. LOVE IT!

Oven Fried Chicken III

The whole family loved it! I used chicken thighs & followed the suggestions of others: 1/2 c. mayo, 1/2 c. milk, 1/4 c. ranch dressing; Japanese Panko crumbs instead of bread crumbs. I didn't use bags (too messy); used shallow bowls (one for mayo mix; one for the dry mix.) I sprayed Pam on a rack before placing the chicken on it; baked on a @375 for 50 minutes (golden brown & crispy) then I turned the chicken over & baked another 15 minutes @400 (golden brown & crispy.) The important thing is to get a big enough rack/pan so that the chicken pieces aren't touching each other, otherwise, the sides of the chicken don't get golden brown & crispy. Easy & yummy recipe...I baked twice in one week!

Banana Oatmeal Cookies II

I was looking for something other than banana bread to bake with my ripe bananas and I really enjoyed these cookies...I used butter shortening, 1 cup chopped pecans (isntead of the walnuts) and I added 1 cup milk chocolate chips. As suggested by others, I added one extra mashed banana and 1/2 cup oats; I doubled the baking soda, doubled the cinnamon, and deleted the cloves. I flattened the cookie drops a bit, then baked for 12 minutes. Delicious...everyone loved them! Eating the cookies, I kept expecting to bite a raisin, so I may add raisins next time; maybe I'll try a version with white chocolate chips to see how that turns out! Definitely will make again!

Baked Apricot Chicken

I love that this was sooooo easy to prepare! I followed the recipe, using the Deluxe French dressing (my grocery store also had a Sweet & Sour French dressing... I wasn't sure which one to use). The taste was good, but not "wow!", however, everyone in my extended family, including my 14yr old son, loved it. I found that the inside of the chicken was moist but not very flavorful. Otherwise, the sauce tasted yummy.

Baked Buffalo Wings

I usually fry my buffalo wings before baking it, which is so time consuming so I was eager to try this recipe. I pretty much followed the recipe (with 1/2 tsp cayenne pepper); I figured the recipe didn't require "20 whole wings", but rather "10 mini-drumsticks & 10 safety pins", which is what we call it in our house.) As suggested, I used a rack to keep the wings crispy. After turning over, I "basted" it by spooning the drippings. I also made a dipping sauce using 1/3 c melter butter and 1/3 c hot pepper sauce. My hubby is a buffalo wing lover, and he gave this recipe the "thumbs up"!

Cranberry Orange Loaf

I really like this loaf! The only thing I changed was that I doubled the pecans (and added pecans on top before baking). Afterwards, I topped it off with an orange glaze, as suggested by others. If you don't like "tart" then you might want to chop the cranberries or use less (or find another recipe...)

Awesome and Easy Creamy Corn Casserole

I love that this was soooooo easy! Sweet enough (but not too sweet) and very moist! Mine turned out as a delicious cornbread, not a "creamy" casserole. The recipe I tried stated to drain the can of corn; however, I noticed one reviewer mention that the recipe she followed indicated NOT to drain the corn (and later tried the recipe with 1/2 the water from the can of corn). Perhaps next time I'll try it with some of the water to see if I like that version.

Best Steak Marinade in Existence

I marinated boneless ribeye steaks overnight (16 hours). We grilled the steaks and my entire family loved the flavor. I'm glad I blended the ingredients (I used my Magic Bullet) because it kept the ingredients from "separating". This marinade is definitely a keeper!

Oatmeal Butterscotch Cookies

I had baked another recipe prior to this one so I mistakenly baked this recipe at 325 degrees for 10 minutes and they came out great. I also accidentally overbaked one sheet of cookies and my mom loved the crunchy version! I added 1 cup of pecans to my version (everyone loved the cookies!) however, for my next batch, I'm going to use 1 cup butterscotch chips and 2/3 cup milk chocolate chips plus the 1 cup chopped pecans. I can't wait!

These were delicious! I don't care for walnuts or semi-sweet chocolate chips, so I always use pecans and milk chocolate chips for my cookies. Everyone loved 'em!

Broiled Grouper Parmesan

I followed the recipe exactly as written...I'd rank the flavor at a 4 stars, maybe 4 1/2 stars, but I give it an extra star for the simplicity and ease of the recipe. I cooked the mahi my hubby caught on an overnight fishing trip. I had all the ingredients handy and it took less than 10 minutes to cook! Hubby & I loved it!

Strawberry Coffee Cake

I followed the recipe exactly and it was delicious! But I wanted something less "cakey", so I made another one, "pushing" some (about 1/2 or 3/4 cup) of the sliced strawberries into the batter before placing layering the rest of the sliced strawberries on top of the batter. (I used a total of 2 or 2.5 cups of sliced strawberries.) For the topping, I melted the butter first and mixed with the rest of the topping ingredients...then added another 1/2 cup pecans. (I love it nutty!) I placed it in the fridge overnight because I wanted to bake it in the morning. It turned out great! It was very moist...almost "dessert-like". I don't know how many calories are in this but it won't matter to strawberry-lovers!

Easy Honey Mustard Mozzarella Chicken

At first, I was a little skeptical about the combination of ingredients (honey mustard with cheese & bacon?) but it was a hit with my hubby, teenager & mom-in-law! This is my kind of recipe...just a handful of ingredients which are in my kitchen already! The only changes I made was I used thighs (we're not "breast fans") which I microwaved till it was halfway cooked. I placed the chicken in a pyrex dish, spooned some sauce, sprinkle the lemon pepper and baked for 15 minutes; turned the chicken over, spooned the rest of the sauce, sprinkle the lemon pepper, and baked for 10-15 minutes (or until chicken's done). I topped it off with the cheese and bacon bits, then baked for 5 minutes. Quick. Easy. Yummy!

Slow Cooker London Broil

I wanted to try this recipe because of its simplicity...and I'm happy to say that it was delicious. I ended up using 2.8 lbs of boneless chuck pot roast (it was on sale) and used 3/4 of onion-mushroom soup mix. (It was a little salty for my taste, so next time, I'll use 1/2 of the soup mix packet.) I added a can of sliced mushrooms about 15 minutes before serving. It was yummy with mashed potatoes (for me) and steamed rice (my hubby & our 13 yr old son), with a bag of veggies (squash, okra, tomato, and corn) on the side! I'll definintely cook this again.

Fresh Tuna Ceviche

My husband caught a couple of bluefins so I decided to try this recipe... absolutely delicious! I added chopped tomatoes and chopped cilantro before serving, which gave it a different twist in flavor. I'll send the hubby back out to fish for more bluefin!
