Gerry's Chicken Enchiladas

The best enchiladas ever. The only ingredient that I will skip next time will be the heavy cream, I will just moist my tortillas with some water there is really no need to add the extra calories when the water will do the trick. Besides that these guys are keepers!

Boston Cream Cake

This cake was so dry and the cream was just ok, will not be making this cake ever again. Very plain not tasty cake, I will definetely take my time next time and make my own creme and make the cake from scratch.

Hearty Split Pea Soup

Best split pea EVER! The only two changes I made was to add 20 oz of the peas, and cut the amount of ham in half. Thank you Deanna for such a rich recipe!

Turtle Cake II

Made this cake over the weekend, when i poured the caramel mixture over the cake it went all around the edges. When I tasted the cake there was no caramel to be found anywhere on this cake. It tasted like a plain chocolate cake with nuts.

Awesome Slow Cooker Pot Roast

I made a couple of changes, I added only one can of condensed mushroom soup and three garlic cloves felt no need to brown the meat. After five hrs cooking this on low heat I added four large potatoes cut in four each, ten baby carrots and a handfull of green beans. One of the best crock pot recipes!

Onion Cheese Bread

Made this bread with a few changes, used red onions 1.5 cups, added fresh garlic, and a cup of fetta cheese, and skipped the butter. Will make again; but next time I will add some cumin and some dry rosemary.

Spanish Rice Bake

I made this rice last night and being from Costa Rica, (where we eat rice with just about every meal) the reason why people are experiencing some difficulties with cooking the rice is because the recipe calls for medium low heat, and the only way you can get the rice to cook all the way is by cooking it in just LOW heat. Cooked mine in low heat for about 40 mins added 1.5 cups of medium salsa instead of the water, and a can of corn and once I placed all the ingredients in the casserole dish before baking it I put a layer of refried beans and sprinkle the cheese. I also added some taco seasoning, cumin, and some fresh garlic when I cooked the meat, since i find that the meat picks up all the flavors when you brown it (I will never brown any meat without spices, is like showering without soap!)

Chimichurri Sauce for Steaks

I will give this recipe 10 stars if I could. Make it with white rice, black or red beans and sweet fried plantains. I always have a hard time finding the sherry wine vinegar, but I use whatever wine vinegar I have available n I still get great results. Thank you Ty!

Orange Date Muffins

I made this recipe, with some small changes: added a small can of cherries with syrup and baked it in a bunt pan, the results were amazing. Note: it took 80 minutes to bake all the way; but it was so moist inside and nice n crispy outside-fabulous!

Cuban Ropa Vieja

OMG this was the best ropa vieja I have ever had! I live near a city where the majority of the people r from Cuba, so there r many Cubans restaurants; but nothing compares to this recipe-small changes: added 4 cloves of garlic and 1 teaspoon of paprika. Do not use flank steak the true ropa vieja is made of beef chuck roast and is served with white rice, black beans and fried sweet plantains! Cook on low for 10 hrs or high for 4 to 5 hrs.

Slow Cooker Pulled Pork

I made some minor changes: rubbed Boston buttom roast with some seasoning salt, crushed garlic, a bit of vinegar and some cayenne pepper, the end product the best pulled pork ever. I will make this again for the Christmas parties, husband went crazy over this recipe and I only spent under ten dollars and had enough pork for ten servings.

Baked Homemade Macaroni and Cheese
