I love this salad! Everything tastes so fresh with the lemon juice and mint. Next time I will fry the pita bread in olive oil. I baked it in the oven until it was crisp. Easier this way, but it soaks up the dressing.

I thought this was great! Nice and tangy with the lime juice and cilantro. I added a little parmesan cheese on each serving.

This was really good. I sprinkled the tortillas with cilantro leaves before filling and then added cheddar cheese on top before rolling up (although this adds more calories).
