Chicken Enchiladas II

I have made this recipe twice now and we love it! I use low fat sour cream, milk and soup to keep the calories lower and it is still rich and delicious.

Angel Chicken Pasta

This recipe is really tasty and extremely easy to make. I cut the chicken into large bite size pieces and I used white grape juice instead of wine. Other than that I followed the directions given. Children, teens and adults all loved it!

Grilled Flat Iron Steak with Blue Cheese-Chive Butter

I made this last night for guests that came over to swim and BBQ and everyone loved it. I followed the recipe exactly except I marinated the meat for about 2 hours. The grill time of 5 minutes on each side was not long enough and my husband had to put it back on the grill for another 5 minutes but every cut of meat and grill is different. I served it with baked potato and grilled corn on the cob. The blue cheese butter was so good and there was plenty so everyone used it for thier baked potato as well as thier steak. It was a hit! Thanks so much for the recipe. I will use it again.

Sweet Party Mix

I added mini pretzles before baking and then M&Ms at the end. I couldn't stop eating this and my guests loved it. My 17 year old begged me to let her take it in a baggie everyday to share with her friends at summer school. Winner, winner! P.S. Don't make this if you are on a diet because you will not be able to resist it and there is nothing diet about it.

Annie's Fruit Salsa and Cinnamon Chips

What can I say that hasnn't already been said! The flavor is fantastic. I used half the sugar. One of the reviews suggested using an egg slicer to dice the strawberries and kiwi and that was an excellent time saving tip! This is time consuming but a crowd pleaser.

Angel Food Cake III

I have made this twice now and it is my husbands favorite - not to mention anyone else who has been here to enjoy it with us. I didn't have the correct pan so I used a bundt pan and it only took about 30 minutes to bake. The cake tends to stick to the bundt pan but I gently and patiently used a knife to get the cake out without damage. I also don't know what cake flour is so I used white flour. I served it with vanilla ice cream, cool whip and strawberries - yum, yum!

Refried Beans Without the Refry

This is the first time I have ever made refried beans of any kind. It was very easy. The texture was good but I felt like mine needed a bit more flavor. Next time I'm going to do the chicken broth instead of water or add diced chiles like other reviews suggested.

Avocado Shrimp Ceviche-Estillo Sarita

The taste on this ceviche is awesome. It is time consuming to make. I cut medium shimp in thirds and it took about an hour for the lime juice to cook the shrimp. I made it a few hours before my guests arrived so it was really cold. I also added cucumbers for some added crunch. I served it with pita chips and my guests loved it.

Guacamole

Great fresh, straight forward guacamole. I followed the recipe the way it was written. Adding the onions and the tomatoes make the guacamole go a lot farther. I made this for a BBQ with 6 people (there was a lot of food) and I still has some left over which is awesome!
