Healthy Turkey Loaf

I was a bit skeptical about this, but it came out really good. As suggested I doubled all of the ingredients except for the egg and baked it for 60 minutes at 350. Also, I mixed a little bit of ketchup and worcestershire sauce and brushed it on the top before cooking, which made a nice glaze. Would definitely make this again.

Peanut Butter Chicken Skewers

This was quite flavorful and easy to make. I had only had peanut sauce in a restaurant before but this really tasted authentic. I used chicken tenders and didn't even bother with the skewers. Instead of grilling I simply cooked them in a non-stick pan while basting with the sauce. All in all, it came out great - I would definitely make it again!

Slow Cooker Pineapple Pork Roast

This is one of the best things that has ever come out of my crockpot! I used a pork tenderloin that already comes marinated in teriyaki sauce. I cut up a sweet onion for the bottom of the pot, and then poured in the can of pineapple chunks and a can of whole cranberry sauce. This cooked on low for about 10 hours because I was at work at all day. It was perfect...hardly any leftovers!!!

Mustard Chicken

This recipe was easy to make and tasted fantastic. I used honey mustard and the regular french fried onions (not cheddar). Also, I used chicken breast cutlets and baked for 45 min at 375 degrees. I served it with green beans and sweet potatoes and it was a big hit!

Turkey and Hash Brown Casserole

Like the other reviewers mentioned, this took longer to make and required the measurements to be adjusted. I used more than double the amount of hashbrowns, and could have used another 1/2 pound or so of ground turkey. I also thought the onion was overpowering...maybe 1/2 of a large onion would have been better. When it came out of the oven and we served ourselves in our plates, it did not look all that appetizing (kind of like a "mush") but the taste was actually quite good.

Tangy Barbecue Sauce

Wow, this was great! I was out of BBQ sauce and didn't feel like going to the store so I turned to this recipe. I'll make this all the time now! I like that as opposed to bottled sauce, you can make up just the amount you need fresh each time you grill! Thanks for the recipe!

Savory Herb Rice

I used chicken broth instead of water and ommitted the soy sauce. Also, I used brown rice instead of white. It came out great, just slightly undercooked. I think next time I will either add more liquid or cook a bit longer at a lower temperature. The water seemed to cook off before the rice was fully cooked. Seasoning was perfect.

Slow-Cooked Corn Chowder

This is an OK recipe. It is easy and quick to make but the consistency wasn't quite what I think of when I think of corn chowder. Just wasn't thick enough. Maybe next time I would throw in another can of creamy soup.

Grilled Orange Vinaigrette Chicken Salad

Sweet And Sour Glazed Chicken

I used boneless, skinless chicken breasts and just one pack of onion soup mix. This was easy and yummy. A good stand-by recipe for a week night...you can keep all the ingredients in your pantry and just pick up the chicken! Good over rice!

Tangy Mango Slaw

I ommitted the onion and walnuts and used celery instead. Also, I used real sugar instead of Splenda. This has a very pungent flavor and there is plenty of dressing, so I think I would cut back next time. Overall, this is unique and very healthy....would make again.

Potato and Cheddar Soup

I was very impressed with how easy this was and how good it came out. I used all my left-overs from Christmas dinner! The only changes that I made were I added the onions at the same time as the potoatoes so they softened. And, I added left-over asparagus half-way through which added a great taste. This came out very creamy and flavorful. Will definitely make this again.

Baked Ziti

I made this recipe twice, once using ground beef, and once using ground turkey; and both were great. In both cases I halved the amount of meat and there was just the right amount. I also added about 50% more sauce. Great left-over as well.

Black Bean Pie

This recipe was great, although the measurements seemed a bit off to me. I only used 4 tortillas with all of the bean filling. I think adding corn to this would make it fantastic. Shredded chicken might be good too.

Easy Chicken Enchiladas

Yummy! I made these with a few modifications = used black beans instead of pinto, half the amount of cream cheese, and 10" whole wheat tortillas. Also, I chopped up 2 chicken breasts into small pieces and cooked them in a non-stick pan with a heavy sprinkle of both cumin and chili powder. I also covered the enchiladas with a bottle of enchilada sauce and sprinkled with some reduced fat monterey jack cheese. This was really really good...could have it once a week!

Artichoke Orzo Pilaf

I substituted shallots for the leek and also added a couple cloves of crushed garlic. I also mixed the final result with a couple cups or so of hot brown rice, to stretch it out. This made enough for a crowd and was great! Especially good for artichoke lovers, but I think this recipe is flexible enough to include all kinds of vegetables. I might try asparagus next time.

Corned Beef and Cabbage

I added a bottle of beer in place of the water, and omitted the vinegar and bay leaf because I didn't have any. This cooked for about 10 hours on low and came out good. The corned beef should go on the bottom of the crockpot with enough liquid to cover. Also, not sure if you are supposed to, but I trimmed A LOT of fat off the brisket before it went into the crockpot...

Island Kielbasa in a Slow Cooker

As other reviewers recommended I used half the amount of sugar (1 cup). Also, I used a 20oz can of pineapple, which is a little more than the recipe calls for. This definitely makes a lot of sauce. Cooked for 6 hours on low and the kielbasa was very tender.

Grandma's Raspberry Bars

These came out great except I made a few changes. I added another 2 tablespoons of softened butter to the topping because it seemed dry. I substituted chopped almonds for walnuts. Also, I realized I didn't have any plain oats, so I used apple/cinnamon flavored oats instead...it turned out great! Would definitely make these again!
