Mom's Macaroni and Cheese

I doubled this recipe for a party and it was the only item on the buffet that was completely eaten! The only change I made was I added some dry mustard while making the rue. I also did not toast the breadcrumbs.

Easy Chicken Enchiladas

Yummy! I made these with a few modifications = used black beans instead of pinto, half the amount of cream cheese, and 10" whole wheat tortillas. Also, I chopped up 2 chicken breasts into small pieces and cooked them in a non-stick pan with a heavy sprinkle of both cumin and chili powder. I also covered the enchiladas with a bottle of enchilada sauce and sprinkled with some reduced fat monterey jack cheese. This was really really good...could have it once a week!

Sweet And Sour Glazed Chicken

I used boneless, skinless chicken breasts and just one pack of onion soup mix. This was easy and yummy. A good stand-by recipe for a week night...you can keep all the ingredients in your pantry and just pick up the chicken! Good over rice!

Artichoke Orzo Pilaf

I substituted shallots for the leek and also added a couple cloves of crushed garlic. I also mixed the final result with a couple cups or so of hot brown rice, to stretch it out. This made enough for a crowd and was great! Especially good for artichoke lovers, but I think this recipe is flexible enough to include all kinds of vegetables. I might try asparagus next time.

Cheese Ravioli with Pumpkin Sage Sauce

I followed this recipe exactly, except that I used a bag of frozen whole-wheat raviolis (not the Buitoni refrigerated kind). It came out great! Has a nice mild flavor, which I think is a good thing because sometimes pumpkin can bit a bit overwhelming when it is a part of a main dish. Also, I agree that the fresh sage makes all the difference!

Easy Creamy Pork Tenderloin

Wow, this couldn't be easier and tastes great. I seasoned the pork loin liberally with garlic pepper, used 2 cans cream of celery soup, and cooked on low 8 hours as directed. The pork stayed moist and the soup makes a great gravy. The only drawback is it doesn't look all that appetizing, something about the color of the soup. Maybe I could have done something better with the presention - definitely tastes SO much better than it looks!!!

Easy BBQ Bake

I baked this at 375 for 45 minutes, uncovered for the last 20 minutes. The sauce wasn't all that thick, but the chicken was still tasty. I had to baste it several times and then poured some additional sauce over the chicken when served. I'd be curious how to get the sauce to stick to the chicken. Thanks for the recipe - I'll try this again!

Oatmeal and Wheat Flour Blueberry Pancakes

These came out pretty good! You really couldn't tell there was oatmeal in them once cooked. I added a tsp of vanilla extract and a few sprinkles of cinnamon. Used regular 1% milk rather than soymilk. Thanks for the recipe!

Corned Beef and Cabbage

I added a bottle of beer in place of the water, and omitted the vinegar and bay leaf because I didn't have any. This cooked for about 10 hours on low and came out good. The corned beef should go on the bottom of the crockpot with enough liquid to cover. Also, not sure if you are supposed to, but I trimmed A LOT of fat off the brisket before it went into the crockpot...

Potato and Cheddar Soup

I was very impressed with how easy this was and how good it came out. I used all my left-overs from Christmas dinner! The only changes that I made were I added the onions at the same time as the potoatoes so they softened. And, I added left-over asparagus half-way through which added a great taste. This came out very creamy and flavorful. Will definitely make this again.

I think this deserves 4.5 stars really. I followed this recipe exactly as written and it came out great. The cheese was a bit hard to detect, and I may not have browned mine long enough to get good color, but otherwise this tasted great. Thanks!
