Amish Breakfast Casserole

In short: good but needs tweaking. In full: I had some breakfast sausage that was too salty so I thought I'd try it in this instead of the bacon. Great choice as it mellowed the sausage just right. When I mixed the ingredients it looked really light on the egg so I added 2 more. Good thing I did, it was just right. I had more than enough cheddar so I used 3 1/4 cups instead of using any swiss. Again, very good. I will try it will some Swiss next time, but not as much as it calls for. Lastly, I only used 1/2 an onion and it was very strong (and I like onion). I'll probably use no more than 1/4 c next time. My husband, who doesn't like casseroles, liked it and said to make it again but with less onion.

Oatmeal Pancakes II

These were really great! This recipe is going to be my new staple. So easy and really great flavor. I doubled the recipe as others recommended so I could have leftovers. I also hand mixed the batter for more texture. The only ingredients I changed were to sub brown sugar for white and I used half the mount of baking soda. I can see possibilities of fruit variations by adding bananas or blueberries to the batter, maybe some dried cranberries and use orange extract instead of vanilla.

Six Can Chicken Tortilla Soup

Wow wow wow! This gets top the top rating for easy, affordable, and great taste. Some reviewers loved the flavor as-is and others thought it bland. I took the advice of one who used taco seasoning. I added about 1-1/2 tbs and the flavor was awesome. I had a leftover rotisserie chicken so I pulled the meat to use in the soup. Wouldn't change a thing!

Pineapple Muffins

At the 20 minute mark they weren't even done rising so I did a total of 6 minutes more. They still didn't rise like a typical muffin, but no big deal. After taking them out of the oven they proceeded to sink as they cooled. My husband was willing to give them a try but didn't like them. I didn't' even want to try at that point.

Easy Chicken and Rice

Although I changed a few things, this was a great base recipe. First, I used olive oil to brown the chicken. I used the boneless thighs I had in the freezer, which stayed nice and juicy. I used carrots and celery for the veggies and I might even use peas next time. Lastly, I used onion soup mix as others had suggested. It turned out great and so amazingly easy to make. The only thing I might do different would be to use regular rice instead of instant. The rice was a little soggy for my taste. Thanks for this great recipe!

Bread Pudding III

This is exactly what I envision when I think of bread pudding. A perfect combination of flavors and so easy to make. The only issue I had was in a part of the process. After mixing the bread cubes with the cinnamon, raisins and butter I found that most of the raisins congregated in the middle after I transfered the mixture to the baking dish. A minor issue, but next time I will place half the bread crumbs in the dish, sprinkle half the butter, cinnamon, and raisins then repeat. Also, because I lOVE the taste, I increased the nutmeg to about 1/2 tsp. I plan to experiment with flavors in my next batches by using peaches, apples, cherries, blueberries, or raspberries instead of raisins.

Turkey Pot Pie II

This was really good. I used store bought pie crust and followed the advice of another reviewer by using 1c evaporated milk rather than the 1/2 c regular milk. I didn't want to make more dirty dishes so I used minced onion instead of fresh. I also added salt, pepper, garlic powder and parsley. Very easy and a great last minute dinner solution.

Pumpkin Fudge

Chalk it up to user error but I've never had any luck with fudge, and this recipe was no exception. It wouldn't set. I had a pumpkin goo that tasted really good. But I don't think it's any fault of the recipe. I'm just going to stick to EATING fudge.

Carrot and Ginger Soup

I had a Carrot Ginger soup in a restaurant in Atlanta but since I've moved away I've been trying to find a recipe. This one is awesome! A great blend of flavors and the consistency was very nice. Very easy to make with an immersion blender.

Sugary Orange Peel

This was time consuming, but well worth the effort. during each of the cooking phases I was able to work on other confections so it really didn't seem to take a lot of work. I included this as part of a candy gift basket and I started getting phone calls asking for the recipe. I followed the directions to the letter and it yielded much more than I expected. The only thing to be aware of is the drying time. It needs about two days or it will become wet and sticky again when piled together. I'm considering adding a few cloves and/or cinnamon to the water during cooking for a spiced orange flavor.

Twice-Baked Sweet Potatoes With Mini Marshmallows

These were SO GOOD!! I made 4 changes: add brown sugar (to taste), add 1 egg white, omit the pepper, and omit the milk (I still used the Buttermilk it called for). The sweetness went all the way through and they held together well. I also chose smaller sized yams so the skins wouldn't fall apart so easily. There were no leftovers from the Christmas dinner table. These will are now a new favorite!

Cinnamon Rock Candy

This was really easy and yeilded enough for all my holiday gifts in one batch! I went to my local organic grocery store and bought essential oils for the flavoring. Be sure to break the pieces small as they take quite a while to dissolve in your mouth and are not really good for crunching. Also made another batch with green coloring and peppermint flavor. YUM!!
