Chicken Stroganoff I

Reviewed: Apr. 23, 2014
After taking feedback from other reviews and wanting to make it a little healthier, here are my changes: ~ used boneless skinless chicken thighs cut into 1" pieces, give or take (wanted dark meat flavor) ~ reduced flour to 3/4 cup and added 1/4 tsp each black pepper, garlic powder, onion powder & paprika ~ browned chicken in 2 tbsp olive oil ~ used 98% fat free cream of chicken soup ~ used 1 c skim milk instead of half-n-half ~ used 3/4 pkg onion soup mix ~ used 1 tbsp dried parsley ~ omitted mushrooms (yucky lol) ~ used Worcestershire sauce for browning sauce ~ used fat free sour cream ~ boiled 6 oz egg noodles . The sauce was fantastic, nice and thick, and the chicken was tender and juicy. It was super easy to make and totally hands off once I set it to simmer. I should note that I added the sour cream into the mix at the beginning by mistake instead of waiting until the end. The author stressed DO NOT BOIL once the sour cream is added, but there were no issues, and I'll probably do it this way from now on just to make it easier. I added this recipe, with my changes and the egg noodles, into MyFitnessPal to calculate the nutrition info with these results: serves: 4, 567 calories (was 704), 17 g fat (was 31), 3 g sat fat, 7 g monounsat fat, 2 g polyunsat fat, 0 trans fat, 79 g cholesterol (was 135), 1230 mg sodium (was 1282), 68 g carbs (was 65), 3 g fiber (no change), 6 g sugar, 33 g protein (was 41)

Fresh Rhubarb Pie

Reviewed: Jun. 22, 2013
I remember my mom telling me I didn't like rhubarb when I had it as a kid, so when my husband asked for a rhubarb pie I wan't too excited. But I figured what the heck. I found this recipe and, with the ratings, determined it had to be considered the best of the best. Let me tell you, it is (not that I have much to compare it to)! A perfect balance of sweet and tart...it reminded me of a cherry pie. I have to call my mom and tell her I love rhubarb!!

'Day Before Payday' Kielbasa and Corn Hash

Reviewed: Oct. 28, 2012
Although my husband said "eh", I really enjoyed this. I was using only what I had on hand and didn't have any frozen veggies, but I did have a can of sweet corn. I also left out the red pepper flakes. The sweet flavor of the corn was a great complement to the tangy kielbasa, and the eggs were a great finish. Had lots of leftovers too. Economical, easy and so yummy!

Easy Horseradish Dressing

Reviewed: Sep. 3, 2012
Holy moley this is gooooooood!! I keep all these ingredients on hand so it was easy to just whip it up. I didn't measure, just approximated by scooping. I used fat free yogurt and sour cream, and olive oil mayo. Great flavor! This is my new favorite dressing.

Chicken Stew with Dumplings

Edible, but just. The peas commanded the flavor of the dish. Very disappointed. I'll look further for another recipe.

Pepperoni Stuffed Mushrooms

Reviewed: Jun. 8, 2012
I had 4 mushrooms leftover so I thought I'd try this for my husband (I don't like mushrooms). So easy to make and all ingredients I keep on hand. He really liked them. The only thing I changed, because I was making so little yield, was to use garlic powder instead of fresh and water instead of broth. Will definitely make again.

Amish Breakfast Casserole

Reviewed: May 28, 2012
In short: good but needs tweaking. In full: I had some breakfast sausage that was too salty so I thought I'd try it in this instead of the bacon. Great choice as it mellowed the sausage just right. When I mixed the ingredients it looked really light on the egg so I added 2 more. Good thing I did, it was just right. I had more than enough cheddar so I used 3 1/4 cups instead of using any swiss. Again, very good. I will try it will some Swiss next time, but not as much as it calls for. Lastly, I only used 1/2 an onion and it was very strong (and I like onion). I'll probably use no more than 1/4 c next time. My husband, who doesn't like casseroles, liked it and said to make it again but with less onion.

Oatmeal Pancakes II

Reviewed: Apr. 17, 2011
These were really great! This recipe is going to be my new staple. So easy and really great flavor. I doubled the recipe as others recommended so I could have leftovers. I also hand mixed the batter for more texture. The only ingredients I changed were to sub brown sugar for white and I used half the mount of baking soda. I can see possibilities of fruit variations by adding bananas or blueberries to the batter, maybe some dried cranberries and use orange extract instead of vanilla.

I was very disappointed by the sharp, bitter taste of the filling. It didn't blend well with the sweetness of the beats. Sadly.

Six Can Chicken Tortilla Soup

Reviewed: Jun. 28, 2010
Wow wow wow! This gets top the top rating for easy, affordable, and great taste. Some reviewers loved the flavor as-is and others thought it bland. I took the advice of one who used taco seasoning. I added about 1-1/2 tbs and the flavor was awesome. I had a leftover rotisserie chicken so I pulled the meat to use in the soup. Wouldn't change a thing!

Pineapple Muffins

Reviewed: Jun. 28, 2010
At the 20 minute mark they weren't even done rising so I did a total of 6 minutes more. They still didn't rise like a typical muffin, but no big deal. After taking them out of the oven they proceeded to sink as they cooled. My husband was willing to give them a try but didn't like them. I didn't' even want to try at that point.

Easy Chicken and Rice

Reviewed: Mar. 7, 2010
Although I changed a few things, this was a great base recipe. First, I used olive oil to brown the chicken. I used the boneless thighs I had in the freezer, which stayed nice and juicy. I used carrots and celery for the veggies and I might even use peas next time. Lastly, I used onion soup mix as others had suggested. It turned out great and so amazingly easy to make. The only thing I might do different would be to use regular rice instead of instant. The rice was a little soggy for my taste. Thanks for this great recipe!

Bread Pudding III

Reviewed: Apr. 12, 2009
This is exactly what I envision when I think of bread pudding. A perfect combination of flavors and so easy to make. The only issue I had was in a part of the process. After mixing the bread cubes with the cinnamon, raisins and butter I found that most of the raisins congregated in the middle after I transfered the mixture to the baking dish. A minor issue, but next time I will place half the bread crumbs in the dish, sprinkle half the butter, cinnamon, and raisins then repeat. Also, because I lOVE the taste, I increased the nutmeg to about 1/2 tsp. I plan to experiment with flavors in my next batches by using peaches, apples, cherries, blueberries, or raspberries instead of raisins.

Turkey Pot Pie II

Reviewed: Nov. 30, 2008
This was really good. I used store bought pie crust and followed the advice of another reviewer by using 1c evaporated milk rather than the 1/2 c regular milk. I didn't want to make more dirty dishes so I used minced onion instead of fresh. I also added salt, pepper, garlic powder and parsley. Very easy and a great last minute dinner solution.

Pumpkin Fudge

Reviewed: Feb. 3, 2008
Chalk it up to user error but I've never had any luck with fudge, and this recipe was no exception. It wouldn't set. I had a pumpkin goo that tasted really good. But I don't think it's any fault of the recipe. I'm just going to stick to EATING fudge.
