Glazed Lemon Muffins

LOVE LOVE LOVED this one. I am a lemon freak and these muffins really hit the spot. Like other reviewers I had a ton of crumbly mix left over...should have paid attention to the reviews before I baked. Oh well! I still really liked them!

Toad in the Hole III

Not really my kind of breakfast food. It was ok. I added about 1tsp of allspice and 1/2 tsp of cinnamon. Some other I see added onion and galic powder, but that just wasn't tempting my tastebuds. The extra spices helped, but it was still kinda bland. Also it would have been nice knowing what kind of pan to use. Is the batter supposed to climb way up the sides? My husband gave me a funny look when I set the dish on the table. We both agreed it was ok, but the hubby said he would rather have my homemade waffles instead. :) I just don't think I'm a toad in the hole kinda girl! Sorry!

Shudderuppers

I tried these with both the caramel and rollos as someone else suggested at a recent family camp excursion. It takes a bit of perfecting to get it just right, but they were good. I don't suggest it for small children, it's way too messy and fussy for them. The other adults liked them. It was fun to try something different, however, for simplicity reasons, I'll probably stick to the old fashion mallow smores.

Lemon Pudding Cake I

This had a very good lemon flavor. The only thing I would do different is cover it for part of the bake time as it nearly burnt the top. It was a little messy to serve, but it was fun to try something other than just plain old lemon bars.

Thai Sweet Sticky Rice With Mango (Khao Neeo Mamuang)

My boyfriend had a hankering for sticky rice so I gave this one a whirl. I followed the advice of others and pared the sugar down to 3/4C. I also omitted the salt. I made the sauce, but it turned out thick and nasty so I ddin't even use it. I've never used tapioca starch before and I'm wondering if I even bought the correct stuff. At any rate, the sauce is not needed.

Mushroom Saute

I am a mushroom freak so I couldn't wait to try this...it was ok. It seemed as though it was missing something. It was a very mild flavor, probably would be really good with the right fish. If you're looking for something more bold this isn't the right choice. If I make them again I would probably add garlic or I saw that one reviewer used some lemon juice, that would be a nice addition.

Pasta with Asparagus

With a few minor alterations this was a very tasty and healthy dish. I did a mix of whole wheat and regular pasta to add fiber. Also, I love mushrooms so I used more than what the recipe called for and I did a mix of different types of mushrooms. Taking the advice of some other reviewers I sauted the asparagus with the red pepper flakes and some thinly slice garlic. I didn't have much parmesan on hand so I used a blend of parmesan and ramano cheese. Next time I may drizzle some lemon juice over it for some extra pizzaz. This is one of those recipes you could tweak all kinds of different ways to suit your tastes or mood. LOVE IT!

Three-Cheese Spaghetti Bake

So easy, so delicious! I took the suggestion of others and added more sauce and it turned out beautifully. However, I did bake longer, for about 30 minutes the first round. That could just be my crappy old apartment oven though. :) This recipe is a keeper!

Ground Beef Shepherd's Pie

I agree with the others. A great recipe that can be suited to fit anyones tastebuds. My husband is a big meat and potatoes kind of guy and he loved it. I too omitted the oil and added cream of mushroom soup and almost a whole packet of onion soup mix. I didn't have any cheddar cheese on hand so I used the pre shredded mexican blend I had. Good meal for a cold day.

To Die For Blueberry Muffins

YUMMMY! Like some of the others I also substitued buttermilk for regular milk. And brown or white sugar, either way the topping was good. I don't know how a person could end up with too much topping, mine came out just right. I have been looking for a tasty, no-fuss recipe for blueberry muffins and I finally found it! Thanks!

Cheddar Baked Chicken

Loved it! Juicy on the inside and crunchy on the outtside. I also added some onion powder. My husband and step daughter loved it. It may not be fancy, but it's quick, easy, rather tasty.

Creamy Potato Leek Soup II

This just didn't do it for me. I really like leeks, but not this recipe. I too tried to cut out some of the fat by using half and half and less bacon. My mom, however, liked it so I gave her the recipe.

Ultimate Spicy Spud Soup

I didn't care for this at all. Way too watery. Even if I had thickened it I don't think I would like it any better. I knew it was supposed to be spicy, but even after cutting down the cayenne considerably, with the pepper it was just too overpowering. Aside from the spice it was rather bland. Maybe using veggie or chick stock instead of water would improve it. I even added celery and carrots and it still seemed kinda bla. Just wasn't the right soup for me.

Lemon Barbeque Meatloaf

Loved this one. It was easy and quick to make. The only thing I would change is the sauce. The cloves and allspice was just a bit too overpowering for me. I think next time will just use a pinch of all spice and skip the cloves entirely.
