I grew up on a dairy farm in Minnesota and now reside in West Fargo. I am a dental hygienist and dental assistant at a practice in Fargo and I LOVE to cook.
My favorite things to cook
Some of my favorite recipes are my minestrone soup, tater-tot hotdish, my homemade mac n cheese, mom's meatloaf, and I always like a nice roast chicken dinner complete with carrots and mashed potatoes.
My favorite family cooking traditions
When I was a kid I remember my mom making caramels, dipped pretzels and other goodies. I asked my mom to teach me her caramel making secrets and now I am carrying on the tradition.

My cooking tragedies
Hmmm...well nothing too terrible. I did start my boyfriends pot holder on fire once. I had no idea it was even buring. It was a huge thick one so I never felt the heat. My boyfriend remarked "Why is it so smokey in here?" and then I realized my mitt was on fire! I've never heard the end of that one.

Thai Sweet Sticky Rice With Mango (Khao Neeo Mamuang)
My boyfriend had a hankering for sticky rice so I gave this one a whirl. I followed the advice of others and pared the sugar down to 3/4C. I also omitted the salt. I made the sauce, but it turned out thick and nasty so I ddin't even use it. I've never used tapioca starch before and I'm wondering if I even bought the correct stuff. At any rate, the sauce is not needed.

Mushroom Saute
I am a mushroom freak so I couldn't wait to try this...it was ok. It seemed as though it was missing something. It was a very mild flavor, probably would be really good with the right fish. If you're looking for something more bold this isn't the right choice. If I make them again I would probably add garlic or I saw that one reviewer used some lemon juice, that would be a nice addition.

Shudderuppers
I tried these with both the caramel and rollos as someone else suggested at a recent family camp excursion. It takes a bit of perfecting to get it just right, but they were good. I don't suggest it for small children, it's way too messy and fussy for them. The other adults liked them. It was fun to try something different, however, for simplicity reasons, I'll probably stick to the old fashion mallow smores.
