Eggnog Cheesecake III

baked in a water bath and kept in an extra 5 min. then just opened the oven door and shut oven off. increased eggnog to almost 1 cup. made a whipped topping with 1/2 cup cream, 1.5 T powdered sugar, .5 t vanilla and .5 t cinnamon. used gold and silver sprinkles to decorate the top with a snowflake. incredible!

Baked Stuffed Pumpkin

There was tons of filling - I baked an additional dish after what fit in the pumpkin. I'm not sure that any of the pumpkin could actually be scraped off into the mix after baking. Family loved this the most on ice cream as a desert. I substituted regular raisins for the golden, and left out the walnuts.

Fruit Pizza I

I personally thought it was way too sweet but my husband and daughter loved it. I used Pillsbury cookie dough because reviewers said there was no difference in taste. I will try again making my own crust and changing the frosting.

Coconut Coffee Liqueur Cake

This was fantastic. I added a little extra kahlua with the water to the cake. I will try next time with Bailey's Irish Cream instead of kahlua and toast the cocunut.

Lemon Cake

Everyone loved this cake. I made two cakes and layered them with raspberry preserves between the layers. I used 1/4 cup of lemon juice and 1.5 cups water. Also lemon cake mix. I frosted with sturdy whipped cream frosting from this site. Great!

Easy Chocolate Chip Pound Cake

I used about 2/3 cup oil and cooked on 325 x 60 min. Came out great. Also - used regular chips and had no problem with them dropping to the bottom.

Baked Omelet Squares

I modified the ingredients and it was fantastic! Used the cheddar cheese, hot italian sausage, a can of diced tomatoes, and added some italian seasonings. Decreased to 8 eggs in an 8x8 dish and cooked for 35 min. Great!

Buttery Soft Pretzels

I had a hard time working with this dough. There was so much flour that I really couldn't get it smooth despite adding 2 T of water. In the end they tasted good but they weren't very attractive.

Zippy Chicken Corn Chowder

I went heavy on the corn and added two large potatoes. Diced everything, including chicken, pretty small. Added ground pepper. Really good.
