Salad with Prosciutto and Caramelized Pears and Walnuts

Reviewed: Oct. 6, 2008
I scaled the recipe to just 2 servings and didn't reduce the orange juice (just used less). The carmelized pears and walnuts were fabulous, and the vinagarette was delicious. It didn't thicken, but vinagarette is typically very thin. Served with a ham and cheese quiche for a great meal - the salad was made while the quiche cooked, and everything came out at the same time.

Hearty Hot or Cold Roasted Tomato Soup

Reviewed: Sep. 29, 2008
My "roasted" garlic was charcoal by the time it spent an hour in the oven, and I drastically cut the stock (used more like 2 cups, not 1 quart). Nice flavour, though, and a great way to use up tomatoes.

Seven Minute Frosting I

Reviewed: Sep. 26, 2008
Tip to people having problems with sugar crystals or getting it to beat up stiff enough: add 1/4 tsp of cream of tartar. It will prevent sugar crystals and makes egg whites beat up lighter. This is the stuff childhood memories are made of.

Easy Sausage Strata

Made this for a potluck - it disappeared very quickly. Great that it can be assembled ahead of time. Looks very impressive, simple ingredients, and great flavour.

We've been known to sub the white wine with whatever is in the fridge. Pink lemonade is really, really good.

Flax and Sunflower Seed Bread

Reviewed: Jul. 8, 2008
Always rises to a beautiful loaf! I've made it with and without the sunflower seeds, and it turns out well either way. I usually mix in the bread machine and bake in the oven.

Easy Deviled Chicken

Cooked 35 min @ 400*F, and it was done and juicy. Subbed plain yogurt for mayo. Quite good, and definitely easy.

Made the recipe as written, and it was great! Next time, I'll try subbing some of the oil for applesauce.

Sweet Potato Pancakes

Reviewed: Mar. 3, 2008
I tried to like these, I really did. I baked the pancakes for 10 minutes at 350*F after frying, to be sure they were cooked through. Overall, they were okay, but it really isn't a secret what they're made of. Too much work for what ended up tasting exactly like sweet potatoes.

Ten Minute Enchilada Sauce

Reviewed: Dec. 11, 2007
Stores in my area don't carry enchilada sauce, so I needed a quick easy way to make my own. This was great! Used up all my leftover roast chicken in a delicious meal.

Easy OREO Truffles

Quick and easy! You really don't need to reserve 9 cookies for garnish, though. 4 or 5 will be plenty.

Smushed Apples and Sweet Potatoes

Reviewed: Nov. 14, 2007
I thought this was tastey! I cooked the sweet potatoes in the microwave (much less prep work this way), and also cooked the apple in the microwave. Just put the apple, butter, etc. in a measuring cup and cook for about 2 minutes on high. Simple and delicious!

Sweet Potato Gnocchi

Reviewed: Nov. 3, 2007
I made a half recipe to use up leftover sweet potatoes, and thought they turned out great! I made them quite small (about the size of the end of my thumb). Anyone complaining about the lack of flavour... um... have you ever had potato gnocchi? These are how they're supposed to be. Hint: cook the sweet potato in the microwave. Just wash the outside, stab it a few times with a knife, and nuke until soft (expect 15-30 min). Then cut in half and scoop out flesh.

Cinnamon Sugar Biscotti

Reviewed: Oct. 24, 2007
Mmmm... fantastic! I halved the recipe to try it out (just used one egg, and sprayed w/ oil instead of brushing w/egg). Turned out fabulous and crunchy! Also, I sliced them with a very sharp serrated knife. I found the key was to saw more than cut, and then they didn't fall apart.

Blackened Salmon Fillets

Reviewed: Oct. 24, 2007
I omit the butter altogether (if you use a non-stick pan, you really don't need it) and adjust the cayenne down a bit so it's not quite so hot... but overall, fabulous! It's such a great flavour with the fish.
