Billy's Favorite Gingerbread Spiced Coffee Syrup

I used molasses in place of the honey, which gives it a darker colour and a little more gingerbread flavour. I bought all the spices for a double batch for under fifty cents in bulk. Tastes fantastic.

Quinoa Turkey Stuffing

As I wasn't roasting a turkey, I cooked the quinoa in chicken stock, then added the other ingredients (omitted the salt because of all the salt in the stock) and just microwaved it for an extra 5 minutes or so. Tastes great! Can't believe how healthy it is, and would happily serve this to guests.

Warm Mango Salsa

Cooked this up as a topping for pork chops - very tastey! I used a food processor to finely chop the onion and jalepeno. Not very hot - could probably leave the seeds in to get a bit of bite.

Whole Grain Waffles

These are great for how healthy they are! Surprisingly light and crisp. I mixed a double recipe in a 2L juice pitcher for ease of spreading on the waffle iron. I added some blueberries, and subbed bananas for the applesauce.

Fat Free Refried Beans

Cut the liquid smoke to half a teaspoon or less, and then it's fantastic! Served with Mexican Rice II, some taco meat, tortilla chips, sour cream, and chopped tomatoes. Yummm.

Hash Brown Casserole II

Cooked in a 4 qt crockpot for 4 hours on high (omitted the topping and halved the butter). Delicious! Formed a nice brown crust, even in the crockpot.

Layered Enchilada Bake

This casserole has become a staple in my Once a Month cooking rotation. It freezes well, and tastes great even a few months later. I like the beans, and have started adding black beans to taco meat in other recipes to stretch it out and add nutrition.

Black Bean and Corn Quesadillas

Added a little cumin. Made a great, fast dinner. If you're not very adept at turning quesidillas, melt the cheese on one side, take out of the pan, put in the second tortilla and cover with filling, then put the toasted cheese one back on top.

Pan Seared Lemon Tilapia with Parmesan Pasta

It was okay. The flavour was good, but the look was terrible. Beige with a side of beige. I served it with mixed roasted veggies (cauliflower, broccoli, carrots, and snow peas), which helped the appearance a bit. It was fairly quick and easy, although it took a little juggling to have it all ready and hot at close to the same time. My husband liked it (especially the pasta).

Amazing Hawaiian Chicken Chili

I halved and simplified this recipe (omitted roasted red pepper, butter, used onion powder for onion, did not marinade chicken first). It reminded me of my baked beans, but with chicken. The people I served it to enjoyed it, and the leftovers were excellent. 4 stars, not 5, for being a little unnecessarily complicated in the recipe.

Chicken Noodle Salad with Peanut-Ginger Dressing

A great way to use up leftover spaghetti, and even better the next day than when I served it. I found the amount of dressing to be fine, although I'm not sure exactly how much spaghetti I used.

Chocolate Dipped Orange Biscotti

I made one batch using a mixer and it required about 1/2 cup more flour. Then I mixed one by hand, and 1 cup of flour was enough. I think that might explain why some people think the recipe is perfect and others have problems. One batch with cranberries and white chocolate, one batch as written: the perfect gift for my mother-in-law. Thanks!

Baked Potato Soup
