Slow-Cooked White Chili

I've never made white chili before, and using this as a base recipe it came out great! I spiced it up, using a tsp of cumin, and cayenne and chili powder to taste. I also doubled the green chilies. Hubby and I like it spicy! I used chicken broth instead of water and chicken boulion, and bumped it us to 3 cans of beans, smashing one of them before adding. I followed others suggestions and added some sour cream before serving. It turned out great!!!

Slow Cooker Venison Stroganoff

This a great venison dish! The only issue I had was with the noodles. They came out kind of mushy. Next time I will cook them seperately. But, that being said, this the flavor of the meat was perfect!

Oven Roasted Trout with Lemon Dill Stuffing

Great way to cook fresh trout! The stuffing was amazing, so next time I think I'll make more to eat as a side dish as well. I also added a glug or two of white wine to the stuffing to moisten it up more than just the olive oil. Also, instead of using lemon zest, I used lemon pepper I had on hand. I also sprinkled that on top of prior to roasting. Can't wait until the hubby brings some more trout home!

Pumpkin Roll with Toffee Cream Filling and Caramel Sauce

This was a huge hit at Christmas. It was actually my first attempt at a pumpkin roll, so I was worried on how it would turn out. I used (greased)wax paper on the jelly roll pan before I baked it. This seemed to help get the roll off the pan much faster onto the towel. As for the taste, I personally thought it was a little too decadent. Next time I might cut back on the toffee pieces. But, that being said, everyone else loved it! It was an instant hit and people were begging to take some home with them!

Parmesan Fondue

People ask me for this recipe all the time. It's quick and great! I usually put it in a small crock pot and take it to pot lucks with 2 loaves of french bread, broccoli, cauliflour, green peppers, and whatever veggies I can lay my hands on. Instead of the garlic salt, I usually saute up about 2 cloves of garlic in olive oil before adding the milk and cream cheese.

Sushi-Inspired Tuna Salad

Loved this! Quick, easy, and the payoff is great. I used ground ginger, and I also added soy sauce. I also cut back on the mayo. Add the wasabi to taste instead of all at once. Next time I will get English muffins as suggested. This takes tuna salad to a new level!

Rabbit with Mustard

Great rabbit recipe! I didn't have regular onion, so I diced 5 green onions. Also added more bacon. (You can never go wrong with more bacon!) We didn't have angel hair pasta, but we put the sauce over white rice and it was very tasty! I agree that this would probably also work in a slow cooker. Will have to try it once the hubby goes hunting again!

Chili Potato Burritos

Great base recipe! I added some hamburger for the hubby (if there's no meat it's not a complete meal). So I only used 2 potatoes and about 1 pound of meat. I also mixed in a can of rotell tomatoes to the meat and potato mixture. Overall, this couldn't be beat! It will be made again soon!

Bacon Cheese Muffins

Great recipe, even for some one like me who isn't great at baking! I followed others advise and used 1 cup flour, 2 cups sharp Cheddar cheese (my parents are cheese lovers), 6 bacon strips , 1 egg, 1/2 cup milk & the 2 tablespoons veg oil, 2 teaspoons baking powder, 1 tablespoon sugar, some salt, some garlic powder, and some paprika. I grated about half an onion in, and since I was out of veggie oil I added some applesauce and butter. I only made 6 muffins, but filled them to the top so they came out giant. I gave them away as gifts in Christmas baskets, and they were a big hit!

Pork Chops with Blue Cheese Gravy

I modified the recipe slightly, but over all this is great. First I fried bacon (about 2 slices per chop) as some had suggested. I then fried up the pork chops in the bacon grease (I know, not the healthiest meal, but its worth it every now and then!) I put the chops aside, then I sauteed an onion in the same pan. Then add the cream and blue cheese. (Hubby and I love blue cheese, so we added more). This combo is sure to please! I served it with mashed potatoes, and some even used the gravy on the them! This will become an instant favorite!

Four Cheese Macaroni

This was amazing! I took it to a pot luck at work, so I made it the night before and warmed it up in a crock pot the next day. I took others advised and cut the eggs, and amped up the cheese! I cooked a cheese sauce over the stove by mixing milk and velveeta and then adding the shredded cheese. I also through in some ricotta cheese that I had in the fridge, and that really made it nice and creamy! I crumbled bacon to put on top, and the crowd went crazy!

Slow Cooker Reuben Dip

I used deli corned beef, and it still turned out good. I also added more cheese, both cream and swiss. I think next time I'll add equal amounts of swiss and provolone as the swiss was a little over powering for some people. The chips went over better than the rye bread bits, and they were cheaper too! Overall not a bad dip.

Butter Beef

I turned this on low as I headed to work, like I normally do with crock pot meals, but when I got home the meat was very, very dry. I had even added wine as suggested in other reviews. If I try to make this again, I will make sure to stay at home and stir it often. That being said, the flavors were all there and had a lot of potential!

Grandma's Green Bean Casserole

I'll admit I was skeptical. I was looking for a green bean casserole for Easter that would "kick things up a notch". This one sounded good, but once I got into it, I got scared of the cheese. I used 3 pounds of fresh green beans, a whole medium onion, and the whole cup of sour cream. I also added some fresh garlic that I chopped finely and sauted with the onions. Instead of the cheese, I used the cheddar cheese flavored French's Onions, mixing half of the container with the green bean mixture prior to baking, and pouring the rest on top to bake. It was good, but nothing impressive. Then at dinner, I placed the shredded cheddar cheese next to it. People melted the cheese over the casserole themselves, and it was amazing! That being said, don't doubt the recipe! Add the cheese! The only good thing about leaving the cheese on the side was that people were able to add it to their own taste level. I'll definetely make this again!
