Spinach and Strawberry Salad

This is easy and simple. Perfect for Easter. I topped it with walnuts. I also substituted sesame (allergy in the family) for flax seeds and it turned out great.

Scalloped Potatoes II

This seems like a good base or rough outline recipe but no way would it be ok on its own. All bland ingredients. Like others suggested, I made a roux but I included garlic in mine. I then alternated layers of potatoes with the roux, prousciutto, asiago and parmesan cheeses. I poured about a half a cup of heavy cream over the top and about a 1/4 cup of melted butter over the top. I then topped it with bacon crumbles and more parmesan and asiago. This is terrible for your health, but it was delicious for a once a year meal such as Easter dinner.

Slow Cooker Stuffing

Excellent. I'm not a stuffing fan and I love this. My family raved. It was good and moist, which I liked, but mine came out just a touch too soggy. I used all the broth and cooked for 6 hours. Maybe next time I'll use a cup less broth or cook it for 8 hours or use a denser bread.

Apple Raisin French Toast Strata

My family loved this. I followed other people's advice and used only 6 eggs and added cinnamon, nutmeg, and vanilla, only I added mine to the egg mixture instead of the cream cheese. When I make this again, I will not dice the bread; I'll arrange whole pieces so that it's more like french toast. I'll also spread the cream cheese on the bread like others have suggested because cream cheese doesn't really dice and trying to get it in small dollops was a pain.

Make-Ahead Turkey Gravy

This was a lot of work for a rather bland gravy. I even added onions and celery to the stock for the simmering step. It's not bad, just not that great. Thanks anyway.

Erica's Delicious Slow Cooker Beef Roast

This was good, but somewhat bland, even though I added worcestershire sauce as others suggested and extra garlic. Could have used some spices or herbs (in addition to the parsely). Very easy to make.

Chicken Florentine Casserole

I used low fat cream of mushroom soup and 2% milk instead of half and half. This recipe was tasty, but rather salty. I would make it again because it is good, but it will be rare since it's not heart-friendly. Makes good leftovers.

Roasted Brussels Sprouts

My husband and I do not like brussel sprouts and we both actually enjoyed these. Very good. during cooking, some outer leaves fell off and browned. These were crunchy and tasty; a nice complement to the dish.
