Quick and Easy Stuffed Peppers
About this Cook
My favorite things to cook
I only cook vegetarian food. Some of my favorite main dishes are: mac and cheese, enchiladas on the stove, veggie stir fry, and mushroom stroganoff. I love making things that taste so much better from scratch, but are normally bought (like bread), and try to use ingredients from farmers' markets and local producers when I can.
My favorite family cooking traditions
When I was growing up, my mom and brother and I would always make the same Christmas cookies, rolling out the dough and cutting out snowmen, stars, and Christmas trees. Then we'd decorate them with different color frosting. I loved to eat the sweet dough, but somehow we still always had cookies to last for weeks.

Mouth-Watering Stuffed Mushrooms
This was delicious! The only change I made was adding a little bit of onion to the stage w/ frying the garlic and mushrooms, and I used olive oil rather than vegetable oil. Next time I would cut down on the cream cheese and maybe add a little bit of bread crumb. But no one complained; everyone thought they were delicious. Cayenne pepper gave a perfect slight kick, too!

Cranberry Hootycreeks
I made the jar, and it was super easy and looks great! Only change was I mixed the white and brown sugars to avoid the brown sugar solidifying, per other folks' cookie jar instructions. I also found out a bit late that my friend dislikes pecans, and did some quick pecan/chip swapping! Just made the recipe to try it out, despite already having gifted it, and it was really tasty! Took me a while to mix it enough by hand, but it got there.

Turkey Shepherd's Pie
Delicious! I used cream of mushroom soup instead of gravy, and no carrots, and added some grated cheese to the top of the casserole. It was really good! I will do this again next year with my Thanksgiving leftovers.
