Low-Fat Blueberry Bran Muffins
These are moist and very tasty. I made the following changes. I used vanilla soymilk in place of the nonfat milk, mashed banana in place of the applesauce, honey in place of brown sugar, whole wheat pastry flour in place of whole wheat and white flour, added an extra egg white, ommited the baking soda and salt, increased the baking powder and added cinnamon. Even I could not resist and ate three the day I made them!

Shrimp and Quinoa
This is a dish with excellent flavors! I cooked 1 cup quinoa with 2 cups water in my rice cooker. I also added a couple cloves of minced garlic, and doubled the mushrooms and peppers, and added a package of halved grape tomatoes. I used about 1/4 cup of lime juice. I plan to make it again adding more chopped fresh vegetables such as zucchini and yellow summer squash.

Italian Dressing Mix
Great after I omitted the garlic salt and salt and added 1/2 tablespoon garlic powder instead. Perfect for low sodium diets. I make many low sodium recipes. No one needs that much salt!
