Easy Meatloaf

This is my go-to meatloaf recipe. It is simple and delicious. I followed other reviewers' tip and sauteed the onions in butter before adding them to the mix. The sauce is delicious, as well. Thanks for a great recipe!

Pumpkin Bread Pudding with Caramel Rum Sauce

Banana Bread V

Try this recipe! It is simple and easy to make. I have made this several times in the past year, and it always turns out perfect. I follow the exact recipe, adding 1 tsp. of vanilla extract and 1 tsp. of cinnamon for a touch more flavor. Cool and enjoy... thanks for the great recipe!

Slow-Cooked Chili

This is a simple, delicious chili recipe. I have been making this one for years, and I never change a thing. The only thing I would recommend is using sirloin chop meat... it's worth the extra cost.

Mouth-Watering Stuffed Mushrooms

Cherry Coffee Cake

Everyone loved this! It was simple to make, and most of the ingredients are ones most would have already on hand. I did increase the cherries to 2 cups, which I think was perfect. When the cake cooled, I drizzled with conf sugar/milk mixture and sprinkled sliced almonds on top. It was not too sweet and goes great with coffee. I believe the cake may even be better the next day ~ seemed to be more moist the day after. Thanks for the easy, delicious recipe!

Peach-a-Berry Pie

If you love peanut butter cups, you will LOVE these cookies. (They're really just a peanut butter cup with a crust.) I make these all the time, follow the recipe exactly, and always enjoy the end results. And so do the people I share them with!

Strawberry Pina Colada Pie

So easy and delicious. It's a cool, light (in texture)dessert that is so different from the ordinary. **Some reviewers complained about the runny consistency, so I took one person's advice and placed it in the freezer for an hour and then transfered it to the refrigerator. It sliced perfectly, so I would do this again. If you love pineapple and coconut, you will LOVE this recipe.

Slow Cooker Buffalo Chicken Sandwiches

So so easy and delicious! I used Frank's Hotsauce and the flavor was wonderful. **Some reviewers complained about the thin consistency. To thicken up the chicken mixture at the end, I mixed 1 tbsp of melted butter with 1 tbsp flour. Then I added it to the chicken, stirred it, and let it sit for 3 minutes. It's the simpliest way to thicken any gravy or soup, and it worked perfectly with this.

Slow-Cooker Corned Beef and Cabbage

If you're searching for a simple way to prepare corned beef & cabbage, you have found the perfect recipe! I followed the recipe exactly, and had a fabulous meal waiting for me when I came home from work. The meat was so tender, and the vegetables, although a bit mushy for my taste, were flavorful and the perfect pairing for the brisket. *One thing I would change = if you are going to be around while this is cooking, throw the onions, carrots, and potatoes in the crock pot after the meat has been cooking for 4 hours. This way they still hold their form, yet are perfectly tender. Delicous! Now a weekend meal can be a weekday meal.

Downeast Maine Pumpkin Bread

I made this recipe, exactly how it says, for my classroom Thanksgiving Feast. Every single one of my 32 adolescent students loved it! And some even asked me for the recipe. It's so simple, yet so delicious. I will never make any other pumpkin bread again. Thanks for the great treat!

Stuffed Shells III

Since it was my first time making stuffed shells, I followed this recipe exactly, and it was not only simple to do, but the results were also REALLY good. This recipe makes over 30 shells, so I made two trays, froze one and heated the other. (It is the perfect dish to defrost and heat up for a quick meal.) And for assembly, I followed the advice of another reviewer and placed the cheese mixture in a large zip-lock bag, sealed it, and cut a hole in one bottom corner to act as a shell filler. This method was quick and a lot less messy than trying to spoon the mixture into each shell. My only modification for next time would be to use 2 jars of sauce - personal preference, though. Thank you for the simple, inexpensive, and delicious recipe!

Slow Cooker Creamed Spinach

This recipe deserves all 5 stars for its simplicity and tastiness. When I make this, I mix all the ingredients in the crockpot (saving myself from cleaning an unnecessary dish), cover, and let it cook for hours. I agree with the other reviewers that said it did not need to cook for that long, so test it after a few hours. Also, this recipe calls for only 2 packages of spinach, which makes the dish too runny - it ends up more like a dip. I added an additional package of spinach, for a total of 3, and it turned out perfect. You can use any cheese you would like, as well. I used white cheddar and it was delicious. This recipe has been around for decades (my great aunt used to make this in the 70's), so it's definitely a keeper. Just tweek it to your likeness, and you'll have this staple creamed spinach recipe for years.

Slow Cooker Chicken Taco Soup

This taco soup is so easy to prepare and so delicious that it's impossible not to give it a 5 star rating! I followed the recipe exactly, and I let it cook in the slow cooker all day. The meat shredded with ease, as well. I topped each bowl with a little shredded cheddar cheese and a dollop of sourcream, as suggested, and that added a slight creaminess to the more brothy soup. This recipe makes enough for plenty of leftovers - it's a filling soup - which were eaten readily in my house. Although I think this recipe is perfection, it's also a flexible recipe that others can tweek to their liking. Also, I used packaged taco seasoning for my first time, but I will definitely try 'Bill Echols taco seasoning' that is listed on this site, below this soup recipe. Annie's Fruit Salsa and Cinnamon Chips

This fruit salsa was so easy and simply delicious! I followed the recipe exactly except for omitting both the white sugar and the brown sugar, as other reviewers had suggested. The fruit and the preserves were definitely sweet enough without the added sugar, plus the salsa kept it's consistency and did not water. I was going to make it even easier by buying the cinnamon chips, but I could not find them in my grocery store. And I am very happy that I didn't, because the 'homemade' chips were the best part - great crunch and light sweetness. I took the advice of another reviewer and used a pizza cutter to cut the butter sprayed torillas into 8 wedges each, and then placed each one in the cinnamon/sugar bowl to coat one side and arranged them on the baking sheet with the sugar side up. This was less messy than sprinkling on the sugar mix. This appetizer/dessert also looks great arranged on a dish. I brought it to a small (20 people) party recently and EVERY person wanted the recipe. It's a versatile recipe that can be served any time of the year - thanks so much for the great dish!

Cheddar Baked Chicken

I made this chicken dish, along with herbed wild rice and fresh steamed greenbeans, in less than 45 minutes. Not only was it quick and simple to prepare (had most ingredients on hand anyway), but the chicken was delicious! It was juicy on the inside and crunchy on the outside - I did put the oven on broil for 2 minutes after the 35 minute cooking time was through just to get the tops a little more browned. It's also great as leftovers, heated up or sliced chilled and thrown into a salad. And it can be made into a lower fat dish just by substituting out the cheese for low-fat and cutting down on the butter a little or all together: spray the pan with Pam or grease lightly with olive oil, and omit the butter drizzle. Thanks for the new simple and versatile chicken dish!

Traditional Mashed Potatoes

So easy and delicious! They are creamy and light, a great side to any meal, and are very versatile. I followed the recipe exactly, and it accompanied my braised short ribs very nicely. If I was cooking a more basic meal, I may add a bit more character to the potatoes, like scallions, chives, or roasted garlic. But this recipe is going to stay in my recipe box as a reference for what the exact measurements are for great mashed potatoes.

Perfect Pumpkin Pie

This was the easiest pie I have ever made! If you are looking for a quick pie to whip up, this is definitely your recipe. And it was delicious, as well. I brought it in for a 5th grade class that was having a Thanksgiving celebration, and every one of them loved it. They ate 2 pies and were looking for more. Thanks for the 'perfect pumpkin pie' recipe - I know I will be making many more of them during the holidays.

Pecan Pie IV

I used this recipe for my first attempt at pecan pie because it looked fairly simple...and it definitely was! I followed the recipe perfectly and only changed to a deep-dish pie crust, which worked out well. It baked for 55 minutes before I pulled it out of the oven because it looked done. (Hard to tell with this type of pie.) Then I served it to friends after it was cooled down to room temperature, and everyone loved it. Very sweet and a rich, creamy consistencey with a crunch - everything a pecan pie should be. Thanks for the simple recipe!
