Red Onion Marmalade

Fabulous! I made according to the recipe, even though I thought it might be too sweet. It was a little tangy, not too sweet, with a very rich oniony flavor. This will disappear and I'll be making it often. Thanks for sharing!

Moussaka Cottage Pie

Wow, so good. I just used the meat & sauce mixture that was extra from a lasagna, and leftover mashed potatoes. This recipe fit my leftover situation perfectly, and we just loved it. Thanks for sharing!

Blackberry Spinach Salad

Delicious! I took this to cards last night, and it went over well. Used pecans instead of walnuts, red onions instead of scallion, and used a balsamic vinaigrette, and the flavor combination was spot on!

Sonny's Waldorf Turkey Salad

My blue heaven, this is so yummy! I doubled the recipe and took it to a potluck. Thankfully, there was a serving or two leftover to bring home. The combination of flavors works so well, and curry just takes it over the top. Thank you SkyBlue1963.

Prosciutto and Parmesan Pinwheels

These disappear pretty quickly. I've taken to two events, and have done the original recipe, and also used thinly sliced ham and thinly sliced swiss cheese. The ones with the Swiss had more melty cheese, but both are very good.

Momma Moots' Pork and Pierogies Casserole

I made this recipe basically as is, except I used left over pork roast. This is comfort food for sure! We both had extra servings and were groaning on the couch. Very easy to prepare, and adaptable.

Baked Delicata Squash with Lime Butter

Wow! Great flavor combination, you sure don't need anything else - the taste of the squash is sweet enough. I did use a crock pot as someone mentioned, and toasted the seeds. Wonderful use of all parts of the squash! Thank you for the recipe.

Tomato Basil Salad

This recipe is great for using excess tomatoes (I never thought I'd say that in Alaska!). It's a throwback to my childhood, my family made this with oregano so I added that. The only other change is that I used Stevia instead of sugar to make it lower carb. Wonderful!

Very good, and very easy! The sour cream is an interesting twist. I followed the recipe exactly, and while we have leftovers, we won't mind enjoying it a few more times this week! This would be a great potluck dish.
