Easy Paella
loved this recipe...after reading some reviews, I decided to leave the lemon out (just used it to decorate the platter)..and add a bag of frozen peas as well as three diced Roma tomateos...I purchased the Saffron ($17 for 4 small vials, all of which I used as I doubled the recipe), but not sure that it made a difference! and if I cannot find it cheaper will prob. just add turmeric next time to add yellow color....I used thighs instead of breasts but w/o the skin (too much fat!)...loved the chorizo sausage, next time will use fresh shrimp instead of already cooked frozen...

Grandma's Chicken Chardon
this was so simple to make and oh so yummy! I had chicken breasts on hand (albeit not boneless or skinless) and wanted some kind of baked chicken recipe....I had the lemon and breadcrumbs (I used Italian), but no parmesan cheese....I waited til the chicken only had 15 more minutes in the oven before throwing in the sliced all came out so tasty, I didn't miss the parmesan at all! and neither did my husband...will def. make again, and it's good enough to make as a special meal for company!

Elegant Fig Appetizers with Goat Cheese and Almonds
I really liked these, they were even better the next day after they'd soaked in the balsamic/honey sauce..just plopped them on top of my mixed green salad for lunch... my husband is not fond of figs, however, and my niece is not fond of blue cheese....(I suggested feta to her which she likes)... I'll still make them, though, they're so easy and so worth it!
