Made these about a month ago for my husband who loves ginger cookies. The taste is out of this world. However my cookies ended up flat, still soft, but flat. There was no way possible to roll these cookies into a ball, not sure what I did wrong, except for using butter versus margarine? I guess it doesn't matter as they were so good, lasted only about 1-1/2 days before they were gone. I can't say they were Big Ginger Cookies either, but they were soft. I may have to attempt these again to see if I can get them to look like the picture, because mine didn't look anything like the picture and if there is one thing I can make that always turns out like a posted picture, it's cookies, except for these. These really are wonderful cookies.
