Pumpkin-Oat Scones

I used quick oats and they turned out fine. I added about 1/2 cup of brown sugar and they were still not sweet enough, even with icing. I tend to like healthy/non-sweet things, but they need a bit more sugar. The texture was dry which is how I like my scones. They could used more of the spices as well. The poster who suggested cutting in the butter with a cheese grater is a genius!

Jen's Creamy Garlic Mashed Potatoes

These were good and rich. I cut the sour cream in half because I didn't have a full cup. I used baking potatoes with the skins on. I made about 4 hours ahead of time and kept them warm in the crock pot with a little half and half in the bottom since my oven was full.

Absolutely Delicious Green Bean Casserole from Scratch

I avoid canned soups so I tried this recipe. I ended up cutting the sour cream in half and there was still plenty. Overall it was pretty bland other than the french fried onions. I will not be making this again

Toasted Pumpkin Seeds with Sugar and Spice

these are awesome. Would have given them 5 stars but you do need to back off on the sugar by at least half. I used exactly 3 tbs and that was way to much. Will make these again.

Pumpkin Spice Cupcakes

good, but not great. i did replace the butter with oil. missing that light fluffy quality i look for in a cake. more like a muffin. I put butter cream frosting on top and of course they will still get eaten :)

Easy Tiramisu Pie

Great idea subbing nilla wafers for lady fingers. There was not enough liquid called for in this recipe. I had to punch holes in my pie and dump more coffee over it because even after 12 hours the wafers were still hard. I would say double the amount. Also double the cream cheese- we couldn't even taste it. People at work also said it needed more coffee flavor- even though I added some extra coffee liquor. Is there such a thing as coffee flavored pudding because that might help. This is a great idea in theory, but needs to be kicked up a few notches.

I accidentally bought whole grain crackers. I thought they were going to be gross. They were great! I can't belive they turned out so well. I wish there was an easy way to make the chocolate coating thinner.

Pastitsio II

This was good, but not as good as pastisio I have had at greek restaurants. It needs A LOT of seasoning. I added extra garlic, oregano and some others and it still was not enough. For how fatty it is, it really should taste amazing. Also unless you have a family of 6 make sure to half this recipe.

Ricotta Cheese Pancakes

If you want the "full fat" version of this recipe change the servings to 8. Use sugar instead of Splenda. 2 eggs instead of egg substitute and add 1 tsp of vanilla. These are the best pancakes I have ever had. I will not eat any other kind!

Creamy Carrot Soup

This soup is very good. I added a little garlic powder, curry, and cayenne pepper. Like others I did not drain the broth at all. I used only one can of broth (about 1 3/4 cups). I think this made it a little thicker which was good. This is probably one of the best soups I have ever made.

Chinese Cabbage Salad II

Love it! Didn't use almonds or sesame seeds because I didn't have any, still tasted great. Also, if you don't have a lot of mouths to feed, you can reserve the noodles in a plastic bag and add a little more everytime you eat the salad so they wont get soggy.

Pumpkin Pie Bread

This was really good, I used 1 1/2 cups of whole wheat flour and used white flour for the rest, you couldn't even taste it. I also used 1/2 cup of sweetened cinnamon applesauce and only 1/2 cup of oil. These made great muffins and I spread cream cheese on them, no need to make a frosting, but I'm sure it would be delicious.

Oatmeal Banana Nut Bread

This bread was a tasty as my usual banana bread, but much healthier. I would definately add spices next time, vanilla and cinnamon. People that tried it said that you could really taste the banana. Also I put 2 tablespoons of wheat germ in it which was good.
