Southwestern Haystacks

We changed a bit as follows: browned 2lbs ground beef with 1/2 cup of chopped onion. Added the corn, 1 can black beans, 1 can rotel, and garlic powder. We then used Mexican-style shredded cheese for more flavor. Also, we reduced the pasta to 6 ounces. It was great. We ate it two nights in a row, then I took the rest to work for lunch.

Poppy Seed Chicken

My whole family enjoyed this, even my 2 and 3 year old boys. I omitted the sherry, but made no other alterations. We will be making this again and again. It yielded a bit too much for us, so I think I will try dividing between 2 8x8 casseroles and freeze one prior to topping and baking.

Barbequed Marinated Flank Steak

I loved it. My 3 year old loved it. My husband wouldn't finish his. He said it was way too tough. I substituted brown sugar for honey, broiled 7 minutes per side.

Chicken Breasts with Lime Sauce

I make this for my husband and 2 & 3 yr old boys almost weekly. They all love it. Very tender. I cut the pounded out breasts into smaller portion sizes, for ease in serving. Also, my husband doesn't like lime, so we use lemon. This recipe is a family favorite at our house.

Healing Cabbage Soup

I made this soup using vegetable broth instead of the chicken boullion. I also added 1 pound lean ground beef, chopped celery and onion. Additionally, I did not drain the tomatoes. It was wonderful. I ate it all last week for lunch and I am making it again tonight.

Tater Tot Casserole III

Very good and easy. A new family favorite. Only changes made, based on other reviews: reduced softened butter to 1/4 cup, reduced sour cream to 8 oz and replaced excess w/8 oz cream of mushroom soup.

Chicken Noodle Casserole II

We were very pleased with this recipe. I used boiled/chopped chicken breasts and boiled the noodles for about 3 mins before mixing into the casserole. Next time I will also add about 1/2 cup of chicken broth to it also, as my husband (who really liked it) said it was a bit to thick for his taste. Also, I halved the recipe for our family of 4 and we had leftovers which were eaten for lunch with no complaints!

Famous Butter Chicken

We really enjoyed this. Agree with all the other reviewers that the chicken is tender, the flavor is great and it couldn't be easier. BTW read another review that said it was bland, but the reviewer substituted whole grain crackers for the Ritz type crackers. If you don't have "buttery round crackers", make something else. It's kind of a key ingredient.

Five Minute Ice Cream

This was very good and VERY easy. It really did only take five minutes! I substituted fresh peaches (chopped and frozen) for the strawberries. Great way to keep from wasting good fruit.
