These cookies are fabulous. Excellent as a "breakfast cookie." I made them exactly as the recipe stated and I loved them, my mom loved them and a diabetic co-worker loved them! I am going to try them again with some raisins and walnuts.
There are many suggestions to add sugar and chocolate chips etc, but that sort of defeats the purpose of this cookie...

An extra note... Now that I have made over 10 batches of these in the last week, I have perfected a few things... I use 1/2 dates and 1/2 raisins because I love raisins. I also added a half a cup of chopped walnuts. Once the oats have sat for 15 minutes I roll the oats into walnut sized balls and put them on the cookie sheet. Messy on the hands but turns out a nice uniform cookie. Then once all the cookies are on the pan I squish them with a spatula. They don't spread so you can fit lots on a pan and they come out nice and round and perfect looking.
Awesome recipe especially if you are watching your sugar. But if not, eat them for breakfast!!
