Harvest Pumpkin Tarts

I used this to make a mini tart. I doubled this recipe and then used 3 boxes of the ready made two crusts in a box. I used a small glass to cut the round shape to place in the mini muffin tins. I baked it for 15 min in mini muffin tins. It makes about 100 tarts.

Oatmeal Butterscotch Cookies

The only thing I did differently was with the oatmeal. I used 1 1/2 cups quick oats and 1 1/2 cups old fashoned oats. It worked great and my cookies didn't have the flat problem.

Irish Cream Bundt Cake

A party favorite wherever I go. For the glaze I bring it just to a boil add the Irish cream and then remove from the heat. It's a little more liquidy but seemed to keep the cake softer as more glaze absorbed into the cake.

Irish Cream Sugar Cookies

I doubled the sugar for the cookies, rolled them into balls after chilling them, and flattened them with a glass dipped in powdered sugar. They tasted fine like that but to add some flavor after they cooled I made a glaze of powdered sugar, Irish cream, and a little Butterscotch schnaps. It really made the flavor pop.

Brandied Shrimp with Pasta

I had to use frozen shrimp, 1/8 cup dried basil, and only used 1/4 cup butter but it was amazing. I'll definately keep and use this recipe again. Oh, I forgot to add the parmesan cheese until we were eating. I liked it better without, some of my family liked it better with, so I suggest waiting and letting individuals add their own.

Microwave Cake

So far I have tried the following combinations: chocolate cake mix with cherry pie filling, white cake mix with strawberry pie filling, and yellow cake mix with apple pie filling and cinnamon. All three times it has turned out wonderfully. If you are looking for a unique way to serve it, try this: CAKE IN A COFFEE MUG~ Mix your favorite microwave cake combo. Spray a coffee mug with cooking spray. For mugs that hold a 1 cup fluid capacity add 1/2 cup batter. Microwave for 1 min 40 seconds. Let sit aprox 5 minutes in or out of microwave. Great in the mug, but easy to pop out as well. (makes 10 & 1/2 mugs worth) For 1 1/2 cup or larger capacity mugs use 3/4 cup batter and microwave for 2 min and let sit for 5. (Makes 7 mugs worth). Note, the first time I tried the regular recipe, I used a silacone pan but not a bundt pan. It turned out ok, but was a little gooey in the center. I didn't have that problem when I used the bundt pan the next two times. It's not a problem with the mugs as they are so small.

The Best Rolled Sugar Cookies

I love this recipe. When I tried them the first time I added an extra half cup of white sugar and a half cup of powdered sugar. It seemed to help a lot with the flavor. I did realize the longer you refriderate the better as I had better luck rolling them the second batch I did, with that batch I left then in the fridge overnight. I also rolled them out on powdered sugar instead of flour. Some I frosted and some I used sugar crystal sprinkles. I also threw some on as drop cookies and pressed them down with a glass with powdered sugar on the bottom and they turned out amazing. This is definately the sugar cookie recipe I'll be sticking with. I just tried using margarine instead of butter and adding 1 tsp of butter extract as well as what I mentioned earlier, and they turned out really good as well.

Crisp Oatmeal Cookies

I've had this both with and without the chocolate chips. I prefer without but had other family members like it with them. I do a double batch and that way we are both happy. This cookies are great but taste even better fresh out of the oven.
