Slow Cooker Cilantro Lime Chicken

Can't get any easier than this. I doubled the amount of lime/ cilantro and cooked on low for 6hrs. Also, I used a fire roasted salsa. As easy as this is, it can be used in a variety of recipes like enchiladas, arroz con pollo and tortilla soup (add 1-2 qts of chicken stock to chicken mixture with strips of corn tortillas as a garnish).

Pesto Chicken Penne Casserole

Easy recipe that tasted great. I followed the recipe for the most part except I decreased the amount of shredded cheese and pesto. I used only 2 cups of cheese and (1) 7oz jar of pesto. Instead of crushed tomatoes, I used a can of fire roasted tomatoes. The breadcrumb/parm topping really gave this a nice taste as well as a nice texture. I will use this recipe again.

Delicious Raspberry Oatmeal Cookie Bars

Made these this past weekend and they were a hit! I did add some cinnamon and a small amount of dark choc chips. I baked mine for 45 mins (9x9) in a foil lined pan. They were delicious.

Aunt Mary's Banana-Chocolate Chip Bread

Great recipe. I like some others, added butter instead of shortening and also added a half cup of finely chopped walnuts otherwise, I kept everything else the same. I added a little flour to the chips and nuts so they wouldn't sink to the botttom of the bread. I baked mine for 65 minutes and it turned out perfect.

Teena's Spicy Pesto Chicken and Pasta

I really like this one! I made this word for word by the directions and loved it. The second time around, I experimented by adding more hot sauce, more pesto, fresh garlic, shallots, mushrooms and red/green peppers. The first time I made this, I used the chili paste and the 2nd time I used- "Taste of Thai" Garlic Hot Sauce. This is a great recipe as is or to build on.

Easy Slow Cooker Meatballs

Simple and great recipe! As others have suggested, I cut the breadcrumbs down to 3/4 cup and I added 1/3 of grated parm. cheese to the meatball mixture. (I used 85% ground beef) I also baked the meatballs about 15 mins at 350 degrees. For the sauce, I used a jar of Classico Four Cheese tomato sauce, 1 can of Hunts diced tomatoes in basil, oregano and onion, added 1 can of tomato paste, and one small can of tomato sauce. I mixed all the tomatoes and sauce in one bowl and added about a 1/2 cup of water. To the sauce mixture I also added 2 cloves chopped fresh garlic, a handful of chopped fresh basil, and a few teaspoons of Italian seasoning. Cooked on low for about 8 hours. The meatballs held their shape and the sauce was awesome!

Sour Cream Pound Cake

Good and very simple recipe. I took the advice of some others regarding oven temp time and adding vanilla extract. (I had an oven temp of 350 and added 1 and a half tsp of real vanilla) I baked the cake for an hour making sure to check it at 50 mins. It turned out perfect! :o)

Pasta Pomodoro

Excellent recipe and so simple! I added a bit more fresh garlic than what was listed and used a can of diced tomatoes with garlic/olive oil already added (in addition to the roma tomatoes.) I also simmered mine for a bit longer than 8 mins. Adding parmesan reggiano and a fresh loaf of Italian bread makes this meal!

Spicy Bean Salsa

Great recipe! I added cilantro and lime as others suggested and only added a few teaspoons of the dressing. To be honest, it tasted good without the dressing as well. It was a nice compliment to grilled steak and chicken.

Oh My Gosh Muffins

Good recipe. I followed the recipe almost exactly the way it was stated however, I did take the advice of the previous reviews and only added 1 cup of sugar. Also, I used 2 large sized, ripe bananas. The muffins turned out great!

Famous Butter Chicken

Great recipe. I followed the recipe as shown with the exception of adding a mixture of spices (paprika, chicken seasoning, black and cayenne pepper) to the crushed crackers. I also added 2 tsp of refrigerated garlic to the butter in the pan. The coating was crisp and the meat was very tender. It turned out perfect :o)
