Donut Muffins

SO good! I used buttermilk instead of milk and it worked perfectly. Just make sure to omit the baking powder and add ½ tsp baking soda instead. Wish I made a double batch!

Lana's Sweet and Sour Meatballs

This was pretty nummy...and my kids liked it, too. I used onion flakes in the meatballs instead of chopped onion. A wee bit of cayenne, or red chile flakes would be good too...just to kick it up a teeeeny bit. I browned the meatballs first in a bit of olive oil. For the sauce, I doubled the recipe, but cut the brown sugar in half and it was plenty sweet! I also added a few more sliced carrots. I then put the sauce and meatballs in my crockpot and left it for a couple of hours so we could be out at kids activities...and come home to a hot meal ready to go. Served over rice.

Shrimp Lemon Pepper Linguini

Ummm, wow!! SO delicious and so simple. My mother-in-law said, 'restaurant quality'. I doubled the sauce ingredients as suggested, but not the lemon. Pepper...just to taste...definitely no where near the 2 tsp...and I used equal amounts of fresh basil and parsley. I also topped the finished product with freshly grated parmesan. Perfect, and loved by all :)

Artichoke Chicken

Quite good. I used marinated artichoke hearts and it gave quite a tart flavor to the topping - my kids did not care for this taste. Next time I may try the un-marinated variety. I pounded out my chicken breasts to an even thickness and then based on previous reviews, I floured and browned them in olive oil, then sprinkled with paprika. For the topping, I used 2/3 cup greek plain yogurt (may have also added to the tart flavor) and 1/3 light mayo, added a couple of minced garlic cloves and remember to squeeze out the excess juice in your artichokes. After topping the chicken breasts with the artichoke mix, I sprinkled a thin layer of panko bread crumbs and drizzled with a teeny bit of olive oil and baked for 20 minutes (because they were thinner and pre-cooked with the browning)...

Fast Chicken Soup Base

Excellent and flavorful chicken soup! I prepared a chicken the day before with a mixture of butter, lemon, garlic and fresh rosemary stuffed under the skin and in the cavity...this definitely gave great flavor to my soup. My only additions were a little extra bouillon, and some pepper.....I added extra wide egg noodles - but left them separate to be added when serving to avoid mushy noodles. Great, great recipe!

Chicken Tortilla Soup I

Super yummy! I upped the chicken broth to 3 cans (instead of the water). I opted for 1/4 cumin instead of oregano, added a good squeeze of fresh lime juice as well as about a teaspoon of white vinegar to give it more zip. Oh, and about a cup of good salsa instead of the green chiles and only used 14 oz of crushed tomatoes as a result. Delicious!

Chewy Chocolate Chip Oatmeal Cookies

The best oatmeal chocolate chip cookie by far! I did NOT add the extra flour, but I did increase the baking soda to 1 tsp and bake them at 350, instead of 325. They turned out perfect and did not spread at all...crispy on the outside and chewy on the inside. Great flavour!

Ultimate Double Chocolate Cookies

Great recipe. The first couple of batches I used a cookie scoop for the dough, but was not all that pleased with the finished product. I decided to try rolling a batch into balls...and what a difference! Great presentation...you end up with a cookie that is shiny and very elegant looking. I strongly suggest the rolling. Also, next time I will add some additional chocolate chunks or chips at the end for a teeny bit more chocolate. Very yummy recipe...I'll add this one to my list of 'tried and true'!
