REGARDING THE AMOUNT OF SUGAR - Obviously, it depends on what type of apples you are using. If you are using tart Granny Smith's, you'll need to use the full amount. Sweet apples won't need as much.

Zucchini Puffs

Very good! An excellent way to use up zucchini from your garden. I squeezed the extra liquid out of the zucchini and added seasoned salt to the batter. Everyone loved them!

Autumn Cheesecake

This was great! I doubled the crust and cream cheese mixture. I'm glad I did, because otherwise it would be a very short cheesecake. I baked it a few minutes longer than stated here, because of the extra filling, until the temperature in the middle registered 160 degrees. Chilled it overnight and it was absolutely perfect the next day. Will make again.

Cream Corn Like No Other

This was delicious and the whole family loved it. Someone eating with us said it tastes like some creamed corn from a famous BBQ place in Texas. I skipped the parmesan and didn't miss it.

Ultimate Twice Baked Potatoes

These really are excellent. I've found that using a melon baller makes easy work of scooping out the potato without damaging the skins. I use less milk than called for, as it gets too mushy. These are requested often by my family!

Simple Scones

Excellent! I added extra sugar because we like them a bit sweeter. I've made plain, blueberry/lemon, and cranberry/orange/walnut scones and they were all delicous. I always keep a stick of butter in the freezer now just for this recipe.

Winter Fruit Salad with Lemon Poppyseed Dressing

Everyone went crazy for this. It was a new addition to our New Year's Day meal, but we will certainly make it again soon. We added a little bit extra sugar to the dressing and subbed pecans for cashews. Delicious!

Winter Fruit Salad with Lemon Poppyseed Dressing

This was a new addition to our New Year's Day meal, and it was fabulous. I made it exactly as written, except for substituting toasted pecans for the cashews and adding a bit of extra sugar to the dressing. At first, a few people looked a bit skeptical and only put a little bit on their plate, but absolutely EVERYONE had seconds. It was a huge hit and I will certainly be making it again.

A Little Country Pumpkin Cake

Wow! I am so glad I made this cake! I baked this in a bundt pan, but wasn't sure there would be enough batter since the recipe suggested using one 10-inch cake pan. However, it was most certainly a full-size cake. It was great just a couple of hours after I made it, but the texture changed and made it even better after several hours longer. For this reason, I will bake this several hours ahead of time in the future. I have to admit that I used a variation of Naples' glaze instead of the icing in the recipe (maybe this had an effect on the resulting texture change?), but it would be terrific with a cream cheese frosting as well. I used cream instead of half&half in the glaze (Naples' recipe) and used quite a bit more than a dribble. But after I brushed it on the cake, it really soaked in and definitely added something special. PS. I omitted the raisins and didn't miss a thing.

No Bake Peanut Butter Pie

This is a FROZEN pie. It stays in your freezer the whole time. Don't put it in your refrigerator! That being said, it was wonderful! I cut the recipe in half because I didn't need 2 pies, but it went so fast we could have used another! Next time I'll make 2, and my kids have requested it this week. I used a chocolate graham crust and added in crushed peanut butter cups. It tasted delicious and was quite refreshing on a hot summer day!

World's Best Pasta Sauce!

This has become my go-to tomato sauce. I just leave out the meat for a a great marinara. I see that someone suggested using all ground beef. I've done that when I was out of Italian sausage, but it's MUCH better and richer with the addition of sausage. This sauce reminds me of my Italian Grandmother's. It's delicious!

World's Best Lasagna

Delicious! It was a great addition to my New Years Day meal. The sauce is WONDERFUL and as others have said, it has many other uses. I've already made the sauce (by itself) again and used it over pasta, and everyone raved. *Don't leave out the fennel seed* This will now be my go-to lasagna recipe.

Shepherd's Pie VI

Very good. I've made it a few times, and I think that adding 1/4 cup of worcestershire (as recommended by some reviewers) is too much. I love it and use it often, but it really overpowers the dish. I do like adding the gravy packet with the meat, but now limit the worcestershire to 1 or 2 T. That said, it was a good meal on a cold night!
