Chocolate Scotcheroos

This is the exact recipe we've been using for years - it is ALWAYS a huge hit wherever I take them. I'm usually not a fan of butterscotch, but they're really a necessity in these. I've had them where people don't use the butterscotch chips, and they just don't taste anywhere near as good. I never refrigerate mine because they get too hard, I just make sure and make them well before I'll need to take them anywhere. Delicious and easy!

Holiday Cranberry Sauce

This recipe was delicious! Everyone loved it at Thanksgiving. I did use a few different kinds of sweetener to give it some depth - used some sucanat, some brown sugar, and some pure maple syrup. Love the spices in this!

Kettle Corn

So nobody else has mentioned this that I've seen, but my oil was popping like crazy before my three kernels popped, so it was dangerous to try and look and see when the kernels actually popped. Has anyone else had this problem? I added the popcorn and sugar too soon because I thought the three kernels had popped when they hadn't, so some of the popcorn burned. But I'm giving it 4 stars because the stuff that isn't burned tastes yummy! (By the way, I used half coconut oil, and I used sucanat instead of refined sugar. yum!)

J.P.'s Big Daddy Biscuits

These were the best biscuits I have made yet! The only thing I did differently was to substitute half coconut oil for the shortening, and the other half I used butter (I don't have any shortening). These were delicious!

Barbeque Pork Two Ways

This is delicious bbq pork. We sub half bbq sauce for the ketchup and don't use quite as much sugar as it calls for, but other than that we follow the recipe and it tastes great!

Chicken a la King I

This was WAY too thick for us. I added a ton of extra chicken broth and at the end I still found it too thick for my taste. The taste was fine - nothing special, although we didn't add the mushrooms or bell pepper because that sounded weird... we subbed peas instead. I don't know if I'll try making this again... I might just try my mom's recipe next time...

Banana Bran Muffins

These are delicious! SO moist. I'm not a big banana muffin fan, but these were amazing. I used 4 bananas because that's what I had, and I subbed some whole wheat flour for the all purpose. Delicious!

Classic Bran Muffins

Everybody loves when I make these - they're quick and delicious! I always sub a little bit of applesauce for some of the oil, and I sub some whole wheat flour for some of the all-purpose flour to make it a little healthier. No one notices and they taste great!

Italian Sausage Soup

This was a very good soup - I'm not a big fan of italian sausage but I wanted to try something different, and we ended up liking this a lot! I didn't include the spinach, but used cabbage instead and whatever other veggies I had around, and I ended up having so many veggies in it that I forgot to put in the beans! I may try using chicken broth next time, but we were very pleased with this.

Chicken and Biscuit Casserole

My husband and I love this recipe, and I love that there isn't any cream of anything soup in it! I haven't used the biscuit recipe they have on there - I've either used store bought refrigerated biscuit dough or have made my own. But this always turns out great!

These were very good but VERY rich. Maybe I'll try subbing some of the evaporated milk for some 2% for part of it - but these were a hit with everyone! Just can't make these every week...

Whole Grain Waffles

These are very good - no one notices how healthy they are! I don't generally have wheat germ, so I just use extra whole wheat flour instead. I love the texture and the taste, and they fill you up!

Simple Mexican Rice

This is delicious - one of the few recipes that I don't change. The only thing I do differently is I just crush the garlic instead of mincing. This is a staple for us - we never make enchiladas without it!

Tangy Slow Cooker Pork Roast

This was heavenly! Previous to this recipe, there were only two ways I could stand to eat pork - now there's three! :) I didn't have as much pork as the recipe called for, but I still used the same amount of ingredients of everything else. I did use beef broth instead of water, and I browned the pork before I put it in the crock pot, and then cooked the onion for just a minute before I put them in. It was SO tender and delicious! Thanks!
