Original Homemade Italian Beef

I used two packages of italian seasoning (one zesty, one regular) and one package of onion soup mix. I also added 8 oz. of hot banana pepper rings along with the pepperoncini peppers.

This reciped would have been great the way it was, however i added a pound of italian sausage for some meat. Good, inexpensive lasagna to make.

Venison Chili

I had my doubts how a bottle of wine could make a good chili sauce, but I was pleasantly surprised. I followed the recipe exactly except for adding 2 habanero, 2 serrano, and 4 jalapeno peppers for extra heat. I will make this recipe again the same way.

Venison Stew II

Excellent stew consistency if you make it exactly like the recipe calls for. I think it needs a little more spice, but if you don't change a thing it really allows you to taste the individual flavors. Its a keeper.

Cajun Catfish Supreme

I enjoyed the taste of this dish, however next time I make it I will change a couple things. When you transfer the catfish to the dish, drain the remaining butter from the skillet before cooking the remaining ingredients. I would also pick the pieces of catfish out of the skillet to help keep down the grease. I would also use low sodium shrimp soup if found.

Good blend of spices for fish. It didn't get crispy for me but i still enjoyed it very much. Perhaps I didn't use the correct amount of cooking spray. However, I will make this again.

Italian White Bean and Pancetta Soup

I used the canned beans method and was very pleased with the outcome. I used a little extra sage and 8 oz. of pancetta instead of the 6 ounces called for, to jump up the flavor. I also used low sodium chicken broth since i had that already on hand (I don't think the extra couple of bucks would have been able to better this tasty soup). I paired it with some garlic sesame breadsticks i bought from Viviano's on The Hill. This makes for an easy, inexpensive, zestful dish i will be making all winter.

Reuben Pizza

Excellent idea for left-over sauerkraut from St. Patty's Day! Its really good with a beer, although i would use slightly less dressing and slightly more cheese. I used fat-free Kraft and it was delicious.
