Refried Beans Without the Refry

I used chicken broth as well. I used the slow cooker but I did it for 4 hours on high because I didn't have the whole 8 hours to wait. My husband raved about them! He said to make those over canned ones always.

Jalapeno Popper Spread

I made the following adjustments per other reviewers suggestions. 2/3 c maynnaise, 1/3 c sour cream. I used 6 fresh from the garden jalapenos. I used half cheddar cheese and half parm. I put some cheddar into the mixture and then I put the cheese on top. I sprinkled regular bread crumbs on top of the cheese and microwaved for 3 minutes. AHHHH-mazing! We LOVED it. It wasn't too spicy, so if you really want a kick, I'd suggest using even more jalapenos.

Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever

LOVE them. It fulfilled my pregnancy craving. Not all of the brownies turned out gooey for me- I've eaten 2 so far.. and one had a gooey brownie and one didn't. I tried them both ways- putting the cake mix at the bottom, and the brownie mix at the bottom. I think they are gooey-er when the brownie mix is on the bottom. Used the fluffy peanut butter frosting as some other posters suggested. LOVE LOVE LOVE them.

Super light and fluffy! I am not a frosting lover, but this one is delicious and pretty easy to make! I just used my kitchenaid mixer and it did everything for me. :)

I use fresh blueberries and add a little more milk to thin them. LOVE THIS RECIPE! Really good with one of the blueberry topping recipes as well. :)

Shredded Beef Enchiladas

The creamy sauce inside was AWESOME! I overcooked my meat... although it was frozen and I followed most of the meat cooking directions. But my roast was also smaller than 3 lbs so maybe that has something to do with it. Next time, I will either cook the meat in the crock pot, or do chicken! Hubbie said it's a keeper but we both think it would be better with chicken. I also added a jalapeno for an extra kick. DELISH!

Sweet Potato Casserole IV

Amazing! Followed the recipe as is. Super sweet and delicious. =) Not so good for leftovers though... doesn't heat up to the same consistency. I don't even really like sweet potatoes but these are to die for!

The Best Thai Coconut Soup

MM MM Delicious!! I made this almost exactly as written except for a doubled the amount of curry paste that the recipe called for. I also used regular mushrooms since I did not have shitake. Also I read on a different recipe--typically you don't eat the lemon grass it's for flavor and smell. I cut the stalk in big enough chunks so they could easily be avoided. =) Really unique flavor!

Poblano Chile Enchiladas a la Gringa

This recipe tastes AMAZING, but it is a lot of work! I know it says 40 minutes at the top... but just blackening and letting the peppers sit is almost an hour. We really love this recipe, but it takes a long time for us to prepare and we would not consider it "easy" to make. It's not something you throw together! But again, it is absolutely delicious when we do make it (every 3-6 months or so). =)

Chicken Tikka Masala

As written, 1 star. WAAAAAAAAAAYYYYYYYYYY too much salt. I don't trust myself that much, so I just figured I'd follow the recipe. I was questioning the amount of salt, but figured the rave reviews and 4+ stars would know better than me. *Should have read the reviews before! Usually do, but I didn't think about it this time. We may try this again, but I think I would do as others suggested and omit all salt except for a teaspoon or 2.
