Pizza Crust for Bread Machine

Reviewed: Jan. 15, 2007
Thank you thank you thank you!! This crust turned out AMAZING!! It's the perfect thickness, and nice and chewy on the inside with a crisp exterior. I'm going to have to stock up on semolina flour, because I'm making this dough all the time from now on! This recipe could be the first step toward world peace. 100 stars!

Vegetarian Moussaka

Reviewed: Mar. 28, 2007
I almost deducted a star from this for how insanely long it took, but I changed my mind because I remembered that, in addition to the finished product being absolutely wonderful, it also made 3 meals for my husband and I. I pan-cooked the eggplant, as per the recipe, but I wound up roasting the potatoes and zucchini (I also ended up having to use almost double the vegetables as were called for.) I also used crumbled gorgonzola instead of feta and romano instead of parm, since those were all I had on hand, and it still turned out magnificent. I personally think the use of the lentils in this dish is genius, and the bechamel sauce tied it all together beautifully. I'm not sure what I did differently from other people, but mine was neither mushy nor crumbly; it was actually perfectly firm and easy to slice through and serve. It really turned out outstanding. I will definitely make this again the next time I have an extra few hours. :)

Luscious Turkey Bacon Refried Beans

Reviewed: Oct. 27, 2006
This is one awesome recipe! There are only a couple of things I changed here; first, I cooked the bacon and onions in a little bit of olive oil with a pinch of sugar, and put in about triple the garlic. Also, I didn't add the cilantro at the end, because it tasted perfect without it. And it only took me about an hour from start to finish. This is a recipe I'll be making often. Thanks!

Cabbage Patch Soup

Reviewed: Jan. 15, 2007
This recipe made one delicious pot of soup! I made a few minor modifications; I used 2 pieces of cooked turkey bacon, cut into strips, instead of the bacon bits, I added 3 cloves of chopped garlic after the onion was cooked, and added a few shakes of Italian mixed herbs toward the end. To avoid the problem others had with the sour cream separating, I first removed the soup from the heat, then added the peas (unthawed). The heat from the soup is sufficient to cook the peas at this point, then in turn the soup is cooled down enough to safely add the sour cream, while still being nice and hot for eating. Thanks so much for the great recipe, and I look forward to making it again soon!

Anna's Chocolate Chip Cookies

Reviewed: Mar. 8, 2007
Excellent! I picked this recipe because I wanted minimal, REAL ingredients (unlike a lot of recipes on this site which call for fake ingredients like crisco and vanilla pudding mix.) They were simple to make and very tasty. I did, as several reviewers suggested, reduce the salt by 1/2 tsp and I left out about 1/2 cup of the flour called for. They turned out perfect!

Easiest Focaccia Recipe

Reviewed: Jun. 1, 2007
Perfect! It was almost TOO easy; I was afraid it wouldn't turn out. But turn out it did. I mixed Italian herbs, garlic, and freshly ground pepper into the olive oil before brushing. It was very flavorful and had a great texture. This recipe will be a staple!

Cocoa Oatmeal Cookies

Reviewed: Feb. 12, 2007
Very nice! I replaced half of the flour with whole wheat pastry flour, used unsalted butter instead of shortening, and also added a teaspoon of cinnamon to the mix as per other reviews. They came out chewy and delicious, not too sweet and almost exotic tasting. I made about 45; I think next time I will make fewer of them in a larger size. This one's a keeper!

Louisiana Sweet Potato Pancakes

Reviewed: Feb. 12, 2007
I really enjoyed this recipe! (In reality I'd give it a 4.5 - I need to tinker with it just a bit to make it perfect for my taste.) I did add some vanilla (a liitle less than a teaspoon), and replaced half of the flour with whole wheat pastry flour. They were no harder to make than any other pancake but were of course much more flavorful. -Just a quick note to the naysayers: If your pancakes came out doughy, you probably made them too big. A couple of tablespoons is all it takes. If they came out too dense, your batter was probably too thick. Check the consistency and add more milk if necessary. You will have small pancakes but they will be fluffy and delicious!

Sage Cornmeal Biscuits

Reviewed: Nov. 27, 2006
These were okay, but not at all what I expected. We couldn't taste the sage at all, even though I added more than twice the amount called for. Besides the extra sage I followed the recipe exactly, and they didn't turn out fluffy at all; they were a bit crispy and didn't rise all that much, even though I was very careful not to overmix. I did like the addition of the cornmeal, however, and they weren't too bad with plenty of extra butter slathered on top. Overall, though, very bland.
