Easy Quiche

Well, I wouldn't call it quiche, but whatever it is, it tastes great! Hubby and I had it for dinner tonight with ham, cheese and mushrooms as the mix-ins and we loved it!

Gourmet Mushroom Risotto

Yum! This was so good! I omitted the chives, personal preference, and we didn't end up using all of the broth b/c the consistency was right. Otherwise, it was made as written. Excellent flavor - everyone loved it. I will definitely make this again.

All American Roast Beef

Chicken Cordon Bleu Casserole

I made this a couple weeks ago for my husband and myself. I did not fry the chicken pieces with breadcrumbs, but just browned them in a little EVOO. I mixed everything together, and it WAS a little runny like others have commented, but I would add sour cream next time to prevent that. Otherwise, this was AWESOME! We both loved it and it's going on the monthly rotation list. Thank you!!

Quinoa and Black Beans

This was surprisingly excellent. I have made quinoa 2 times and hated it. The flavor just turned me off. But, my husband likes it so I thought this would be a good "compromise" recipe. When prepping to cook, I googled "cook quinoa" and found that you need to rinse it before cooking it. RINSE IT! It made all the difference. The bitterness that occurs naturally on the grain disappeared and I was able to fully enjoy the dish. We used only one can of beans and canned corn, but I followed to rest exactly. This was just awesome and made me feel like I was eating something very healthy and nutritious. I have already recommended this to several coworkers. Thanks!!

Six Egg Pound Cake

I made this for 8 servings and it fit perfectly in a bundt pan. It was good, but better the next day, after stored on a covered cake stand. I served it with strawberry sauce and it was a nice dessert. Not spectacular, lighter than most pound cakes I"m used to, but it was good.

Taco Seasoning I

I just got done making this for my husband and I. It is fantastic! He said there is no need for any other seasoning, ever. I halved the chili powder and cumin, as we like things just a little spicy, and left out the salt and black pepper entirely. This is a great salt-free mix and we will definitely use it again. Thank you!

Stuffed Green Peppers I

These are great! I had never made stuffed peppers before and I think I definitely picked the right recipe to start with. I made a couple small alterations: I sliced extra-large peppers long-wise instead of cutting the tops off smaller ones, I used provolone cheese instead of chedder, I used crushed tomatoes instead of whole, and I added a few dashes of hot sauce to the filling. This is an excellent, healthy meal! Thank you!

This was very good, but we made some adjustments, so I can't give 5 stars. I used boneless breasts and baked them with the sauce on already. It was excellent!

Chuck's Favorite Mac and Cheese

I didn't really enjoy this. If you like creamy mac and cheese (similar consistency to velveeta or kraft) this is not for you. This was more like noodles with lumpy melted cheese on it. I tried to like it but just couldn't.
