Creamed Chipped Beef On Toast

This is a good basic recipe for chipped beef. I added a little bit of garlic powder, fresh ground black pepper and a sprinkle of paprika. I also put in a can of LeSeur baby peas. (my mother always added that when I was a kid, and I just have to have peas in my chipped beef!) I soaked my beef a couple of times before I added it to the sauce. It wasn't salty at all.

Spaghetti Carbonara

This is a good basic recipe which I tweaked a bit. Instead of using bacon, I used pancetta (Italian bacon). I also added some finely diced onions to the frying pan when I was frying up the pancetta. Then, after the pancetta was nice and crispy, I added a few tablespoons of red wine to deglaze the pan. It added a nice deeper flavor. I also added a cup of frozen peas. Other than that, I followed the recipe. It's a good base recipe. I also recommend using fresh grated parmesan, not Kraft shake cheese. Regiano is the most flavorful, but any parm will do.

Rach's Broccoli Casserole

Loved this recipe. My changes...I used fresh broccoli which I blanched first. I also added diced ham and a can of diced, cooked potatoes. I also didn't have any Ritz crackers and I used some sauteed panko bread crumbs on top. It came out great! I was really surprised just how good this recipe came out!

THE Pasta Salad

I did some major tweaking on this recipe. I have to say it was a good recipe to tweak though. Instead of frozen peas, I used diced red peppers and vidala onions diced very small. I did not use cheese either. I kept everything else. To the sauce, I added dill, parsley, salt and pepper and a little garlic and onion powder. I also added about an extra tsp. of dijon mustard. I love recipes I can modify to my likes and this was a good basis of a recipe.

Chicken Veronica

This dish was ok. A little too rich for me. My son (who is almost 17) wasn't terribly impressed with it, he said, "it's ok" I served it over a multigrain pasta, and I think I would have prefered a regular angel hair, but that was my error. I think I would replace the cooking sherry I used with a better sherry, also.

Chicken with Lemon-Caper Sauce

This was a great recipe. I have tried more difficult chicken picatta recipes before, and this easier version really impressed my guy and his roommate. I would definitely make this recipe again, even on a weeknight after work!

Potato Ham Bake

I liked this recipe, my teenage son did also. I tweaked it a little though, and used Campbell's cheddar soup instead of the soup suggested. I also sliced the potatoes very thinly, as the casserole takes a very long time to cook with raw potatoes. It's a very substantial meal if you have some leftover ham or a hamsteak lying around.
