Sweet Pork for Burritos

This was really good and easy. I did a few things different but mostly out of laziness or neccesity. I didn't blend the salsa. I used Coke Zero because that is what I had. I ran out of Taco Seasoning but I did have the Fajita seasoning. Overall - it was really tasty and would be great over rice. When I make it again, I will used 1/2 the sugar because it was a bit too sweet for me and my husband is a diabetic. I wonder - was the cola for taste or tenderizing?

Slow Cooker Carnitas

I made this today and it was awesome. I took everyones advice and tripled the spices except the cinnamon. I also coated the meat with the spice mixture the night before. I put in the crock pot for 10 hours and thats it. The only thing I wish I could have done was turn it. I was at work all day so I couldn't do it after 5 hours as advised. Fortunately it was still very moist. I think I wont use so much chicken broth next time. It was really much better than I expected! Not spicy (hot) at all - which I am fine with. It's just an FYI if people are wondering.

Chili Rick's

I made this for a chili/soup cookoff at work. Not only did I not win, but mine had the most left uneaten. I was pretty happy at first - it's a little different with the different meats in it. I liked it though - until I added the choclate. I only added 1/2 of what was recommended. To me, it ruined it. If you like Mole sauce, you may really enjoy it. I may try again without the chocolate.

Banana Cream Pie I

This was such a wonderful pie! The recipe was easy too! As others directed - I did not cook the pie, I used whole milk and cornstarch , rather than flour. I upped the vanilla to 1 Tablespoon. I topped it with cool whip. It was luscious and had great banana flavor! I made a homemade graham cracker crust. Next time I may try with a touch less vanilla and maybe add banana extract. It didn' need it though!

Campbell's Kitchen Easy Beef Enchiladas

This was a decent meal but the ratio of meat was way off - at least for us. I made it with the 1 lb of hamburger, 93% lean. I started to add the soup and beans and thought that this was way too much. It would be more bean and cheese soup than anything. I only added 1/2 can of each and for us, I still would want more beef. I think it's just a personal preference. Otherwise, all I did different was I used Nacho Cheese Soup instead of plain cheese soup. I would make it again but with 1-1/2 lbs or more of burger.
