Magic Cookie Bars from EAGLE BRAND®

My family loves this and all the variations we have made. (various chips, nuts, etc.) I have found that an extra Tblsp of sugar mixed in with the graham cracker crumbs helps keep the crust together.

Cranberry Cheese Bars

Flavor? Amazing. But I ned to try again using regular flour, then tweak it from there. I used gluten-free flour, since it's all I had on hand, and the crust was just too hard. Also the ratio of bottom crust to cheese filling seemed off, as well. It is tasty and unique enough, however, to make another go of it!

Baked Pineapple II

I liked the flavor of this very much, but will be sure to 1. use 1/2 the butter called for, and 2. soften butter well, then add eggs and room temperature milk separately. A nice change.

Blueberry Pigs

Family liked this a lot. I used purchase pie dough, however, so it was easier to roll, stretch, etc. If I make again, I may spread a layer of sweetened ricotta first, then overlay the blueberries.

Meatballs with Spaetzle

Simple and Easy Stuffed Peppers

These really are easy! My family really liked them, but I found a little more flavor was needed. I added more herbs and Worcestershire sauce. I "overstuffed" pepper HALVES which I softened briefly in the microwave. The chicken broth isn't really necessary, it just adds an additional savory element. These freeze extremely well, so I made up a few lunch containers that my husband can just "grab and go!" Thanks for the recipe!

Pesto

This is very good. If you don't have pine-nuts, walnuts work, too. Did this in my vita-mix for a smoother finished product, and then froze it in an ice cube tray. Each cube is about 2 Tblsp, which is enough for my husband and I to share when having pesto on pasta.

White Chili II

Made this without the Monterrey Jack and used less cayenne. Used Masa to thicken it a bit. could have used a little more, but the FLAVOR was very good! Made this for the office and everyone ate two bowls. Thanks for the recipe!

Liked this, but think it would be better to cook orzo in just enough liquid to be completely absorbed. Might try chicken or veg broth with 1/2 the turmeric called for.

Savory Roasted Chicken

Wow, WOw, WOW! This was AMAZING, and soooo beautiful! Use fresh herbs and orange. Huge difference! (just remember to use 3x as much called for) I Used sage, as I didn't have savory. And rubbed triple the olive oil into the skin. Fantastic results, with a flavor that was a little different than my "same-ole, same-ole." Gonna make this for my mother-in-law when we visit. She can't help but like me now! :D

Beer Braised Irish Stew and Colcannon

This was the hit of our St. Patrick's Potluck! I made the colcannon with turkey bacon, and it came out great! Like it so much, I plan on making that as a side for other dishes. The beauty of it is that it was so flavorful, none of the kids realized they were eating a veggie along with the potatoes! Great recipes! Thanks!
