Skillet Zucchini

I agree with others that it isn't a pretty dish when finished but it was wonderful. The only change I made was using canned diced tomatoes. My husband won't eat zucchini but I liked this well enough to fix it just for me. There aren't many things that qualify for that.

Baked Corn

I really like this. I used 1/2 cup butter and 2/3 cup sour cream otherwise followed the recipe. My husband won't eat cornbread or anything that even looks like cornbread so I am going to try freezing half of this. Will probably try a can of chopped chilies next time. Will also bake it in an iron skillet like I do regular cornbread.

Fire Side Coffee

This was very good. After trying it I added another half cup of coffee crystals and about half a cup of sugar. I used 4 heaping teaspoons of mix, added water then 1 teaspoon of sugar free coffee syrup. Next time I will probably use vanilla flavored creamer.

Best Tuna Casserole

Never cared much for tuna casserole until now. This really turned out good. I always use reviews written by others to see what they suggest. I used 1 can cream of chicken and 1 can cream of mushroom. Put 1 can of milk in sauce pan and melted American and Velveeta cheese. Cooked onion in 1 tbsp butter. Used 1 can peas and carrots. No mushrooms. 2 cans of albacore tuna and 1 can packed in water. My husband and I both loved the results.

Slow Cooker Cassoulet

This was really good. My husband seldom likes food that is all cooked together but he was really suprised at how good this is. I used a can of Campbell's Soup Chicken Broth and a splash of white wine. I mixed some flour and water mixed in a cup then poured into the crock pot and turned on high. Worked really great. Will be making this often. I enjoy reading reviews and often use the changes suggested by others.

Cherry-Blueberry Pie

I used this recipe for a pie auction at church so didn't have a chance to try it. After it was sold it was cut and everyone who tried it wanted the recipe. I have since baked one for us and it is without a doubt the best pie I have ever tried - and the easiest. I did substitute a large can of pie filling and removed about half the filling part. Used all the cherries. Scant two cups of blueberries. Also used 1/4 cup Splenda for Baking instead of the sugar.

Dr. Bird Cake

This cake was very good. I used 1 cup sugar and 1/3 cup Splenda for baking. Everything else was by the recipe. It was good enough to bake for a cake/pie auction at church tomorrow.
