Slow Cooker Chicken and Dumplings

Great chicken & dumplings recipe! I have never been able to make them in the "traditional" way and this recipe seemed too good to be true. I only had two large chicken breasts, but still used two cans of soups and used 1 can of chicken broth instead of water. I only used 1 can of biscuits, but if I had used 4 breasts, I probably would have used both cans. The only negative I could find was that mine tasted really salty, but I'm pretty sure that is my fault. I salted the chicken first like I usually do before cooking, but the cream of chicken soup is full of salt, so next time, I won't do that. Other than that, it was wonderful. If there are any campers out there, this seems like it would be a easy recipe to do while camping - we're going to try it next weekend!

Taco Bake II

I made this last night for a quick and easy taco dinner. I did not drain the tomatoes and instead omitted the water. The chips soaked up a lot of the moisture, so they were a little soggy, but it made them taste a bit like a tamale, so it wasn't all bad. My family enjoyed it, even my picky six-year-old daughter finished seconds. We always serve this type of dish with lettuce, cheese, sour cream and salsa on top. This particular dish didn't stand out in my opinion, but it was something different and easy and I'll definitely make it again. Thanks!

Weekend Brunch Casserole

When I run out of meal ideas, we will often have breakfast for supper. I was tired of the same old scrambled eggs, sausage and bacon routine, and this casserole was an easy, delicious meal that was quick to prepare. I did add some onion to the sausage when I browned it and used 6 eggs (with 1 cup of milk) instead of the 4. I took the advice of other reviewers and cooked the crescent rolls for 5 minutes before adding the sausage, cheese and eggs. I also cooked the casserole for 30 minutes on 375 because the eggs just weren't done before then (I don't like runny eggs!) My husband and kids enjoyed it and the leftovers reheated well for breakfast this morning. Thanks!

Pope's Valentine Cookies

These are wonderful cookies that are so simple to fix. I can have a batch made and be all cleaned up in an hour! They are similar to a shortbread cookie and taste great plain or with the sugar cookie icing several have recommended (available on this site). It doesn't make a ton of cookies - about 2-3 dozen, which is fine, because I seem to be the only one in my family who likes them! One hint: they don't spread when baking, so you can put them pretty close together and get more out of a batch. Mine were perfect after 12 minutes. Thanks!

Sweet and Sour Chicken II

This was a super, quick recipe. I didn't use the water chesnuts as I don't care for them and I didn't have any celery on hand or I would have used it. I used the frozen, honey-battered Tyson chicken nuggets, baked them according to the box directions while I was putting the sauce together, and added them to the sauce when it was done. Excellent! (and fast, too!) I'll definitely make this again.

Three-Cheese Spaghetti Bake

I fixed this last night for a quick, easy supper. It was really, really good! I added some browned ground beef to the spaghetti sauce and added a little extra spaghetti sauce, as some had said it needed a little more. I was afraid after I smelled it cooking that it would be too garlicy (I don't like a strong garlic taste), but it was very mild. My husband liked it as well as my picky four-year-old. I will definitly fix this again - it's a nice change from our regular spaghetti.
