Rice and Chicken Casserole

My mom has made this for years and it is one of my favorite dishes. One thing to remember though, rice does absorb liquid so you may want to add milk if you notice it drying out. Since I have been making it, I pre-cook my rice then add all the other ingredients and bake it for 25 to 30 minutes just to heat everything up.

Linda's Lasagna

I grew up using cottage cheese in lasagna and I think it works/tastes fine. No need to use ricotta cheese like some people insist on doing. But then again, I'm not Italian. I am only giving this 4 stars because I feel it tasted sweet and I don't care for sweet tasting lasagna. Next time, I would cut the sugar in half. Other then that, I really enjoyed this recipe.

Easy and Delicious Chicken and Rice Casserole

This was one of the family favorites growing up. I do mine a little different. I usually use a whole chicken that has been boiled until it falls off the bone. Let cool then shred. In the past I had mixed remaining ingredients with the chicken then baked for said time. However, now what I do is pre-cook rice according to pkg instructions then mix all the ingredients then just pop in over until heated thoroughly.

Cantaloupe Cream Pie II

I'm only giving this 3 stars. While everybody liked it, they thought it was too sweet. It was definitely worth trying. Especially when wanting to use up some cantaloupe that is getting too soft.

Best Ever Pie Crust

This is the exact recipe my mother-in-law uses and she ALWAYS gets asked to make the pies for any functions. There is not too much fat at all in the recipe. Give this a recipe a chance. I firmly believe that pie crusts take practice, perfect crusts do not happen overnight.

Perfect Berry Shortcakes

I did as one reviewer done. I patted it in an 8x8 pan. I will say grating frozen butter is a PIA. Next time I will use a pastry cutter and just cut in cold butter then has been cut into cubes. I added 4 TBSP of sugar to the dough and did not sprinkle any on top. I think it had fantastic flavor. This will definitely be one I use again.

Chicken Pot Pie II

Delish! I did add a diced up potato and left out the celery since I didn't have any on hand. I also used pork in place of the chicken. This will definitely be my go to when needing a pot pie

Potato Casserole II

This was very delish! I didn't have any hash brown potatoes so I peeled and diced some of my own potatoes then par boiled them. Mixed everything together and baked as instructed. Very good.

No Fail Pie Crust I

One kick butt pie crust recipe. I followed it exactly as written except used apple cider vinegar because I didn't have white. It was so flaky. Next time I'm going to try the butter flavored shortening just to see if that makes any difference.

Simple Sloppy Joes

I made this exactly has written and thought it was good. However, next time I would cut back on the amount of brown sugar. I did think it was too sweet. Sloppy Joes should not be sweet.

Pineapple Cheese Casserole

I was very surprised how good this was. Even my husband liked it. I did half the recipe and only stuck in about a 1/4 cup of sugar only because my pineapple was pretty sweet.

Blueberry Pie

This is was the best I've had. I made no changes except used a double crust instead of a lattice top. 3 T of cornstarch was plenty. It set up just enough to not be runny but not be like a gel. Which I don't like my pies to be.

Baked Garlic Parmesan Chicken

My husband who is not a fan of chicken loved this recipe. His exact words were "it's a keeper". I used Italian bread crumbs since I didn't have plain and I forgot to add the basil. But I figured it was a wash. I only made two breasts and I had just enough oil. You would definitely need to use more if doing the 6 breasts.
