To Die For Blueberry Muffins

Excellent. Just took them out of the oven. The only change I made were to make 12 regular muffins and therefore, reduced the temp to 350. When using fruit like blueberries, mix them with a little flour before adding to your mix to keep them from sinking. I used 1/2 tlb topping for each and will freeze the leftovers.

Homestyle Turkey, the Michigander Way

Oh my. I'm now a big fan of Michigan. This was incredible. I had a 10lb Turkey Breast, and used butter and salt w/the warm water and bouillon. 4 cups of stock would be good as well. That was it. Reduced the cooking time a little. I cannot believe how moist this was. Usually turkey, especially just breasts, are dry. No more brining for me. I will use this recipe for Thanksgiving as well. Thanks.

Chicken Enchiladas II

This was excellent. It might not be authentic with flour tortillas but it's still very good which is what counts. I also used a few cloves of sliced garlic instead of garlic powder. Since I needed to serve 8 I used 2 cans of cream of chicken ( instead of mushroom) soup and upped the chicken to 2 cups and the cheddar also to two cups. I used a large sheet pan.

Spinach Chicken Parmesan

This was very good. I needed more than 1/3 cup parmesan cheese. I also used 1 ten ounce of box of spinach and added about 3/4 cup milk. I also added a little bit of nutmeg with the spinach a la Rachael Ray. You also definitely need a bigger pan about 9x13.

Slow Cooker Chicken and Dumplings

This was very good. The only changes I made was to add more chicken, I figure 1 breast per person, added some frozen peas towards the end and like another reviewer said I added 2 small cans of biscuits 2 hours before meal was done.

Easy Meatloaf

This was excellent. I used a combo of lean beef and pork otherwise I followed exactly. I didn't saute the onions beforehand as I like a little crunch to them. Might cook a little longer than 1 hour next time.

Lemon Chicken Piccata

Fantastic. I used 4 breasts ( for leftovers) and pounded them pretty thin. I also used 1.5 cups chicken broth for the extra chicken and 2 cloves of garlic. I cut the chicken into around 1 inch pieces. I cooked them in 2 batches. I sliced the half lemon very thin. After the butter was mixed in I added the chicken back to the pan to reheat as I didn't use the oven to keep warm. I served this with Vermicelli. I will definitely make again. Thanks!

Corned Beef and Cabbage I

This was awesome, thank you. I had 2 pieces of meat totaling almost 9 lbs. I used the Freirich brand which doesn't need spice packets. I added a little mustard powder. I also used 2 small heads of cabbage and close to 5lbs. of small potatoes. When the water started evaporating I added a little bit of Guinness every 1/2 hour or so, 1 pint total. It cooked from 9:30 am to 6:30 pm and was perfect.

Peanut Butter Cup Cookies

Awesome. I got 48 after using a small ice cream scoop. I didn't have enough PB Cups so I used M&M's and small chunks of Snickers Bars. You could add almost any candy. Great tip about freezing the PB Cups. Worked perfectly.

Incredibly Cheesy Turkey Meatloaf

Excellent. I used 1lb dark ground turkey and 1lb of ground chicken. I also added lots of garlic, onion powder and Worcestershire sauce. I used cheddar as that it what I had on hand. I didn't use as much as was called for in the recipe. I topped it off with Maple Chipotle Grille Sauce from Stonewall Kitchens. Leftovers were excellent.

Banana Cream Pie I

So good! Made this for my Dad's 84th birthday. My first time making Banana Cream Pie and Pudding. Only thing I changed was using Corn Starch instead of Flour. I used a Keeblers 9" graham cracker pie crust and brushed it all over w/ egg white and baked @375 for 5 min. I lightly brushed the crust with bourbon. I found the key to the pudding is patience. Keep stirring till it comes together ( consistency of frosting) almost 10 minutes. I did use whole milk but not sure that matters. I was afraid I might scramble the eggs when adding a little of the mixture to the beaten eggs then quickly added all the eggs into the mixture stirring constantly for 1-2 min more. Then you have to quickly slice and place your bananas in the shell before the pudding gets a skin. I crammed in 4 med. bananas added the pudding and baked for 5 more minutes to set up. I refrigerated for a few hours and topped with Bourbon Whipped Cream. Served this with Banana Ice Cream (made from blending 2 softened haagen dazs pints and 2 bananas..freeze for a few hours).

Bruschetta Chicken Bake

This was so good and so easy to make. I used 2 lbs of diced chicken and had a nice layer on the bottom of the pan. Served with a salad and it was a great meal. Leftovers are just as good.

Amazing Pork Tenderloin in the Slow Cooker

Excellent. I used the two pork tenderloins from Costco. I used 1/2 an envelope of the onion soup mix and did not add any other salt. I cooked for one hour on high then 3 on low. Next time I will just cook on low for 4 hours. I served with mashed potatoes and peas. This was really good and will definitely be used often. Thanks.

Penne with Spicy Chicken Sausage, Beans, and Greens

This was fantastic. I left out the pasta since we're on pasta overload this week. I added 3 extra sausages. I used the cooked chicken tomato, basil & mozzarella ones from Costco. I added a tsp of red pepper flakes for spice. I served w/a salad. Bread would be nice too to mop up the sauce. Thanks!

Honey Glazed Pork Tenderloin

This was fantastic! I kept everything the same except I doubled each of the ingredients and added two crushed cloves of garlic. I marinated the tenderloins (2 lbs total) for a few hours then put everything in a roasting pan. I basted the tenderloins twice. There was plenty of the fabulous sauce leftover for the meat and some to go with roasted potatoes.
